Homemade Mushroom Soup!

Mushroom Soup is very popular in soup varieties at restaurants. There is also cream of mushroom which tops up with cream.

My kids love mushoom, later read and learnt that it has more iron in it and very good for health. I very rarely cook mushroom at home, so this time tried preparing Mushroom soup and fried rice. 

Sharing the soup recipe first, do try and let me know your feedback.




Preparation time - 15mins

Cooking time - 20 mins

Serves - 2 pax

Ingredients

  • White button mushroom - 8 nos
  • Onion - 1/2 no or small one
  • Garlic 2 small pods
  • Sugar 1/4 tspn(optional)
  • Milk/cream - 2 tblspn (optional)
  • Black pepper - crushed or powder 1 tspn (as per taste)
  • Oil or butter or ghee - 1 tblspn
  • Salt as per taste 1/2 tspn
  • Water as required

Preparation Method

  1. Wash the mushrooms and remove the skin.
  2. Heat a kadai, add oil, garlic, onion and just saute for few minutes till its transparent.
  3. Now add mushroom and saute for few minutes. You can keep aside 1 or 2 pieces of mushroom for garnish.
  4. Add salt and off the stove
  5. Once cool grind to fine paste
  6. Now again heat kadai, add the gounded paste with water. Adjust consistency of soup (around 1 cup of water)
  7. Boil well for 3-4 minutes add chopped mushrooms.
  8. Taste and switch off the stove.
  9. Add cream or milk if you wish to do cream of mushroom.
  10. Top it with pepper powder.

Mushroom soup is ready to serve. Serve with garlic bread toast or plain toast.

Instant Bread Vada/Vadai!

Are you bored eating bread? Bread vada is a very easy and delicious snack. You can make as starters for a party or a kids evening snack, you can make with or without onion. I had seen on TV long back in a cooking show.



Ingredients
Bread slices(white/brown) - 8 pieces
Rice flour - 1 cup or as required
Rava/semolina/sooji - 1/2 cup
Curry leaves - 2 sprigs finely chopped
Coriander leaves - 2 tablespoons finely chopped
Onion - 1 big finely chopped
Green chilli - 1 no(optional)
Red chilli powder - 1/2 tspn
Salt
Oil for deep frying

Preparation Method
Cut the sides of the bread.
Take 2 bowls, in one water and dip the bread pieces and squeeze water.
In another bowl put this bread and make a dough.
Add rice flour, rava, onion, g. chilli, curry leaves, coriander, r chilli powder and make a dough.
Heat oil in a kadai
Make small balls of the dough.
Just flatten like vada and deep fry both sides till brown.

You can fry like medhu vada or normal vada or any shape you desire.

You can also fry in appe pan if you dont want to deep fry.

Pumpkin Soup | Winter Recipes!

I am posting a recipe after a long time, my inlaws are here and with the baby I am not able to blog. But still will post when I find time.

This week it was a bad weather in singapore, it was raining daily so all of us fell sick with cold, cough and flu. My father in law got more cold and fever. My son also has school holidays and he loves soup.

So I prepared this simple soup for the weather. They just loved it. 



Ingredients
Sweet Pumpkin - 200 gms or 1 cup chunks
Pepper - 1/2 tspn(adjust as per taste)
Spring onion -2 tblspns
Salt
Water 1 to 2 cups
Cream - 1 tblspn(optional)

Preparation method
Pressure cook or steam the pumpkin.
Allow it to cool a bit.
Transfer it to a mixie, add 1 cup water and blend to smooth paste.(it should not be too thick or too thick just soupy consistency)
Add spring onions, salt, pepper.
Boil it.

Garnish with cream.) I have not used

Serve hot with garlic bread or as it is. I like spicy.

PS - Adjust salt n pepper according to your taste.

Eggless Milo Cake Loaf | Eggless Baking| Easy Kids Recipe!

I am into baking after very long time. Since its summer holidays for the elder one, he has been asking me to bake muffins, but then when I saw this Eggless cake in Sangee's blog, just changed a few things and tried. It was delicious. Still I am amateur baker, this was a good one. 


Ingredients
All Purpose Flour/Maida - 1.5 cups
Milk powder - 1/2 cup
Sugar - 1/2 cup
Baking Soda - 1 tspn
Baking powder - 1/2 tspn
Curds - 3/4 cup
Vanila essence - 1/2 tspn
Milo - 2 tblspns
Olive Oil - 1/2 cup
Salt - generous pinch
Hot water - 1/2 cup(if required)

Preparation Method

Preheat the oven to 350 F, grease the baking tray I used bread tin.
Seive/sift APF, milk powder, baking soda, baking powder, salt, milo and sugar. Mix all well in a bowl.
Now beat the yogurt/curds to smooth, add vanilla essence, mix well.
Add the dry ingredients and mix slowly in one direction.
Finally add olive oil give a quick stir.
Pour in the tray, if you wish you can add chocochips or nuts.
If the batter is too thick add little milk or hot water.

Bake for 30 mins or till the tooth pick comes out clean. I just added gems since my son wanted it.

Eggless Milo Cake Loaf is ready to eat. Serve it for Breakfast with Coffee/Tea.

Notes - Milk powder and Milo are sweet. You can reduce a bit of sugar if you want.

Bread Pizza Bites | Bread Pizza | Easy and Quick Kids Snack Recipe!


Last week had gone to friends place for tea time, she had prepared this and we liked it a lot. So yesterday my son wanted this for this evening snack after school. Since I don't have microwave it was easy to prepare on tawa.

So I prepared and we enjoyed it. This is very easy and quick snack to prepare. I have already posted Paneer Pizza and Tawa Pizza previously here.

Hope you like it. Surely kids will love and it will be hit in the parties for starters too.


Ingredients
Soft White Bread - 4 nos(As required)
Butter - 4 tspns
Salt - a pinch

Veggie for Toppings
Capsicum - 1 no finely chopped
Tomato - 1 no finely chopped
Onion - 1 no finely chopped
Tomato Ketchup/sauce - 4 tblspn
Cheddar cheese grated/Cheese slice - as required
Red Chilli flakes - 2 pinches(As per your taste) for small kids optional
Chilli Sauce - 1 tblspn - Optional


Preparation Method
Heat a tawa/skillet.
Take bread slice apply butter on both sides and toast only one side till brown.
Now apply ketchup on the toasted side. top it with all the vegetables, salt, red chilli flakes and cheese.
Put on tawa and close with lid on low flame till the cheese melts.
Then remove and cut into tiny pieces or serve as it is.

Bread Pizza | Pizza Bites is ready to serve. Its very crunchy and delicious.


Serve with Ketchup/Sauce or as it is.

Bread Bajji | Fritters!

Tired of eating vegetable bajji......... try this with bread. This has been in my drafts since years. I tried this bread bajji, we all liked and it was different.

Here goes the recipe.
Ingredients
Bread -4 slices(White/Brown)
Kadale maav/Besan/Chickpea flour -  1/2 cup
Corn flour - 1 tspn
Red chilli powder - 1/2 tspn(As per your taste)
Hing/Asafotida - a generous pinch
Salt - 1/4 tspn
Water - as required to make batter
Oil for deep frying.

Preparation Method
Cut the edges of the bread and cut them into triangles.
Make the semi thick batter out of  the ingredients above. It should not be too runny or too thick.
Heat a kadai/wok with oil, let it be hot.
Dip the bread slices in the batter and put slowly in the oil.
Deep fry both sides till brown.

Bread Bajji/Fritters is ready. Enjoy hot with Tomato Ketchup.

Homemade Mixed Fruit Jam | Step-by-Step Recipe Type 1!

Homemade Mixed Fruit Jam is a simple and delicious spread mix of fruits. I never thought would be making jam at home:) but when I was talking to my friend Rekha about it she told me a simple recipe for the jam. I have slightly changed the recipe, it tasted delicious. Kids will surely love!

Step by Step Pictorial Recipe


Soak agar agar strands in water.


Wash, remove skin, seeds and chop all the fruits into  chunks.

Heat a non stick pan, put the soaked agar agar with 1/2 cup water in low flame. Allow it to dissolve.

Grind all the fruits to smooth paste.


When the agar agar is fully dissolved, add the grounded fruit mixture into this and mix well.

When you feel the raw smell is gone add sugar and stir.

Mix and keep stirring

It will be in liquid consistency

 Remove the paste from sides and keep stirring till its bubbling up and thick.


Off the stove. Add the vinegar.


When its thick and finally looks shiny

Ingredients
Strawberry - 6 nos
Apple - 1no
Banana - 2nos
Guava(white) - 1 no
Brown sugar - 1 cup(As per your taste)
Vinegar - 1/2 tspn
Agar Agar/China Grass - few strands
Preparation Method
Soak agar agar strands in water.

It will become thick  jam.
Store in air tight container and use with your bread.



Delicious homemade mixed fruit jam is ready to serve.





  The next day served with Wholemeal Bread/Toast. Enjoyed.

Brocolli Soup!!!

Brocolli Soup is a simple and healthy soup. Its good for health as its rich in iron. This is for my son, who love soups.



Ingredients
Brocolli - 4 big florets
Milk - 1/2 cup
Water - 1/2 cup
Turmeric - a pinch
Pepper powder - a pinch
Salt

Preparation Method
Wash and rinse Brocolli.
In a vessel, add brocolli, water, salt and turmeric.
Allow it to cool and blend with milk in mixie/blender. Add pepper and warm it.

Serve warm as it is or with Garlic Bread.

Brocolli Soup is ready to serve.

I wanted to post this review since long time, its been in my drafts, so finally posting it up.

When CSN came to me for a review I was happy and agreed, which was announced in this post. CSN has a wide range of Cooking and Kitchenware and Pendant Lighting. Its site is userfriendly and great for online shopping.

This Grill Pan, when I saw first, I liked it very much. I have seen grill pan which is square but when I saw this just like a tawa/skillet. I loved it.

I am using this for grilling bread, you can also use this for Paneer tikka and grilled vegetables as well. Its very good and handy.

Vegetable Cutlet!!!

I love Veg cutlets and always had at restuarants in Bangalore. We get good ones when we are on train to chennai. This one is my Father in laws speciality and it was so yummy. Thanks for teaching me Dad. I had previously posted Potato Cutlet checkout the post.

This is a perfect starter for parties.


Ingredients
Beetroot - 1/2 cup
Carrot -1/2 cup
Potato -1/2 cup (Boiled and mashed)
Green Peas -2 tspns
Kadalai Maavu/Besan - 2  to 3 tspns
Bread crums - 1/2 cup
Red chilli powder - 1/2 tspn 
Garam Masala - a pinch
Onion - 1no
Curry leaves - few
Salt
Oil for deep frying


Preparation Method
Boil the potatoes and mash it. Keep it separately.
Chop all the vegetables into small pieces.
Cook all vegetables in pressure cooker except onion with very less water and salt for 2 whistles. Remove excess water. (If excess save it for soup and drink.)
Transfer it to a wide vessel. Slightly mash it when its hot.
Add kadalai maav/besan, onion, salt, red chilli powder, garam masala and make medium size balls.
Take in your palm slowly and firmly press once and coat bread crums on both sides. Don't over press, it may break while deep frying.
Heat oil in a kadai and deep fry till golden brown.

Serve hot with tomato ketchup or enjoy as it is.


Notes:

- You can also shallow fry instead of deep frying.
- You can also bake.
- You can also add chopped green chilli, I didnt add as it will be spicy for my kid and my inlaws. 
- You can do it without onion also.
- You can also add Pudina/Mint leaves.
