Onion Tomato Gojju Pasta | Indian style!

I had posted here on instagram poll. Many had asked the recipe for the pasta. Here is the simple recipe for the same. I hope you enjoy. My kids and family liked it a lot and I prepared 2 times in a week.

Ingredients
Onion  - 2 onions (chopped)
different version can be referred here
Tomato - 3 nos(chopped)
Garlic - 4 nos(big ones finely chopped)
Sambar powder - 1 tblspn(adjust as per spice level)
Turmeric powder - 1/4 tspn
Pepper powder - 1/4 tspn
Parsley and oregano.
Coriander finely chopped(optional)
You can use anyone of the above for garnish
Salt to taste
Water if required
any shape pasta - 2 big bowls or 4-6 handfull.
Oil - 4 tblspns
mustard - 1/2 tspn
fenugreek seeds - a pinch

Preparation method
First, in a heavy bottom kadai, add oil, mustard seeds and fenugreek seeds. once it splutters add onion, garlic and saute till pink.
Now add chopped tomatoes.
Add salt, masala powders and cook till it becomes soft and mushy. Add little water and cook to saucy stage. Now the gojju is ready.
Add cooked pasta and mix well.
Adjust salt.
Garnish and serve.

I have not used cheese for this pasta. You can top it with cheese.

Besan Poha Laddo | Krishnajayanthi recipes!

Maaladu/Besan poha laddu is a slight twist for regular maaladu/besan laddu. My kids love maaladu a lot, I added aval and prepared for this krishnajayanthi and they liked it. Checkout my Maladoo/Besan ladoo recipe here.



Ingredients

Aval/Poha/Rice flakes - 1 cup(medium size)
Potukadalai/Chutney dal - 2 cups
Sugar - 1 cup
Cardamom - 4 nos
Ghee - 1 cup melted
Cashewnuts - few

Preparation method
Heat a kadai/wok, add aval and dry roast it for 5 mins. Then transfer it to a plate.
Add pottukadalai and dry roast till you get good aroma. Tranfer it to plate.
Let it cool a bit.
Now add aval/poha to mixie and pulse to fine powder. Transfer to a bowl.(You can also seive it)
Add pottukadalai to mixie and pulse to fine powder. Add the aval/poha powder and grind together again to fine powder. Transfer to a bowl.
Add sugar, cardamom in mixie and make a fine powder.
Transfer to bowl and mix all well.
Heat the ghee and add cashews. Once its brown off it, add to the powder and mix well and start making lemon size balls.

Laddoo is ready to serve.

Easy Olive Dosa | Kids Snack box recipe

From the day we brought Olives from Mustafa my son is back of this bottle. He wants all his food with olives imagine sambar with olives:). This morning I was packing his snack box and created this recipe. yeh he finished and told it was very delicious.

yesterday was Olive rice, could not take photo in the morning. So will be cooking with olives this week.

Serves - 1
Makes - 2 nos


Ingredients
Dosa maav/batter - 2 laddles
Black olives - 2 tablespns
Ghee - 1 tspn

Preparation Method
heat a tawa, pour 1 laddleKarandi maav/batter spread little bit. Immediately arrange olives on it.
Pour 1/2 tspn ghee.
Cook both sides till slight brown.  He did not want too brown.

Serve hot with tomato ketchup.

PS - Batter is not fermented as olives are sour.
If you are serving at home can add cheese too.

Karuvepillai and Thakalli Rice | Curry Leaves Tomato Rice!

This is an easy prepare and tastes delicious.


Ingredients

Rice - 2 cups(Basmati or normal) I used Ponni rice
Tomato - 3 nos
Curry leaves Fresh - 3 sprigs
Curry leaves powder - 2 tablespoons
Onion - 1no
Ginger - 1 tspn
Red chilli powder - 1/2 tspn
Coconut Milk - 1/2 cup
Oil - 3 tablespoons
Cinnamon - 1 big piece
Salt

Preparation method
First Wash, rinse and soak rice in water.
Heat a kadai, add oil, put cinnamon chopped ginger, curry leaves and onion. Fry till onions are slightly brown.
Add chopped tomatoes, salt, turmeric, curry leaves powder and red chilli powder.
Let it all cook well and combine.
Add Rice and stir.
Add coconut milk, salt and water.
Pressure cook for 3 whistles.

Once pressure is done, mix and serve.





































Serve with Papad /Onion Tomato Raitha.

Notes - You can grind curry leaves with ginger and add.

Beet Paneer Pulav | No Onion No Ginger Garlic| Pressure Cooker Recipe! Easy Lunchbox Recipe!

Beet Paneer Pulav the name seems to be new to me as well, as I tried this to eat beetroot in different form from our usual poriyal. So this is my creation of mixing of beets and paneer as my hubby likes beetroot and son loves paneer in all dishes I prepare. So mixed both and they enjoyed! I loved the colour and taste of the Pulav:-)

This was truly delicious and colourful. Perfect for lunch box. Kids will also love at lunchbox.



Serves : 3-4 persons

Ingredients
Beetroot - 1 no med size
Basmati Rice - 1.5 cups
Paneer cubes - 2 cups
Milk - 1/4 cup
Green chilli - 4 nos
Fresh Grated coconut - 1/2 cup
Tomato - 1no
Jeera - 1/2 tspn
Chopped coriander - 2 tblspns for garnish.
Spices - 1 big roll of cinamon and 2 nos cardamom
Oil - 2 tablespoon
Cashews - few
Ghee - 1 tspn for garnish
Garam Masala - Optional


Preparation method
Thaw paneer. Wash, rinse and soak basmati rice in water.
Heat a pressure cooker, add oil, jeera and spices, cashews saute for few minutes.
Add chopped tomato, green chilli and saute.
Add grated beetroot, salt and saute till raw smell goes.
Add basmati rice, grated coconut and paneer and saute.
Add water and milk. Check on salt if requried. Mix well.
Close the lid and pressure cook for 2 whistles.
When the steam is up add chopped coriander and ghee.
Mix well.
Serve with plain curd/yoghurt or with onion raitha or with papad or boondi.

Delicious and healthy Beetroot Paneer Pulav is ready.

Notes - You can add any veggie if you wish.
You can also increase the quantity of beetroot.

Homemade Kulfi | Flavoured Milk Popsicle| My New Method!

This Kulfi or Icecream prepared specially for my hubby and son. Simple and easy method my style, just love I got this idea from the Paal Payasam I prepared for my son's 4th Birthday. I had prepared in large quantity. I had chilled some for him. Then when I was serving my hubby, got this idea by seeing the colour why not I try and see how it comes.

My family really enjoyed it and my hubby was surprised with my idea/method. I told him after he enjoyed it:-)




Ingredients
Paal Payasam - 4 glasses(For recipe click here I have updated with new photos).
Ice cream moulds/popsicles
chopped nuts (optional)


Preparation method
Just pour the paal payasam in the moulds and freeze for a day.

You can add nuts if you wish. I have not added. I just cut one kulfi for my son who didnot know how to eat in popsicle:)

Enjoy the Kulfi my new style as it is or remove and cut, garnish with chopped nuts before serving.

Strawberry Rose Juice | Summer Specials!

Strawberry Rose Juice is a new mix of fresh strawberries and rose essence. Since my son loves both thought of mixing and he enjoyed the juice.

Serves - 1

Ingredients
Strawberry(Korea)- 6 nos
Rose Essence - 2 tablespoons
Chilled water - 1 glass
Sugar -  1 tablespoon
Ice cubes as required

Preparation Method
In a blender/mixie put all the ingredients and blend to smooth juice. Strain it.

Serve with ice cubes.


Strawberry Rose Juice is ready to serve.

Aval Oats Dosai!!!

This is an easy and quick dosai, was thinking what to do with aval/poha/rice flakes. Took it to make Aval Upma and ended up with dosai. My family like it too.


Ingredients
Aval/Poha/Rice flakes - 3 cups (thin or thick)
Oats - 1 cup(I used quaker quick cook oats)
Green chilli - 1 no(As per your taste)
Rice flour - 2 table spoons

Seasoning/Talipu
Oil - 1 tspn
Mustard - 1/4 tspn
Hing - 2 pinches
Jeera/Cumin - 1/2 tspn
Coriander/cilantro leaves chopped - 2 tspns
Salt

Preparation Method
Wash and rinse aval, leave it for few minutes.
Add oats, green chilli, water and grind to fine paste in a mixie or blender.
Now season the batter with the above ingredients.
Add rice flour and mix well without lumps. Add water if required.
Heat a tawa/skillet and pour the batter slowly. Do not spread, it will spread by itself. It will take sometime to cook. Wait and slowly turn around.
Put oil and steam both sides.


Soft and Crispy Aval Oats Dosai is ready. Serve hot with Coconut chutney or Molagai Podi.

Notes - If you have time you can mix and leave the batter for 1 to 2 hrs and then make dosas.

Spinach Potato Brocolli Curry

Palak Potato Brocolli Curry is very different and tasty sidedish for sambar rice, rasam rice or curd rice or even chapathi.


Ingredients
Spinach/Palak or any greens - 1 bunch chopped.
Brocolli - 1/2 no florets
Potato -  1no chopped to med size
Onion -  1no chopped
Ginger garlic - 1 tspn chopped
Grated coconut  2 tspns(Optional)
Green or Dry Red chilli - 2nos
Turmeric powder - 2 pinches
Curry leaves - few
Salt
Oil - 2 tspns
Mustard - 1/4 tspn
Jeera - a pinch

Preparation Method
Put Brocolli in hot water and leave it for 5 mins.
In a kadai, heat oil, add mustard and wait till it splutters. Add jeera and fry for  a minute.Add chillies and curry leaves and saute.
Add onion, ginger, garlic, a pinch of salt and fry till transparant.
Now add potato and mix. Let it cook. Close a lid.
When its almost done add palak and mix let it cook.
Once done add brocolli, salt, turmeric and sprinkle little water.
Let everything cook well and when its done, off the stove and add grated coconut if you are using.

Mix and serve. I prepared with and without coconut.
