Homemade Kulfi | Flavoured Milk Popsicle| My New Method!

This Kulfi or Icecream prepared specially for my hubby and son. Simple and easy method my style, just love I got this idea from the Paal Payasam I prepared for my son's 4th Birthday. I had prepared in large quantity. I had chilled some for him. Then when I was serving my hubby, got this idea by seeing the colour why not I try and see how it comes.

My family really enjoyed it and my hubby was surprised with my idea/method. I told him after he enjoyed it:-)




Ingredients
Paal Payasam - 4 glasses(For recipe click here I have updated with new photos).
Ice cream moulds/popsicles
chopped nuts (optional)


Preparation method
Just pour the paal payasam in the moulds and freeze for a day.

You can add nuts if you wish. I have not added. I just cut one kulfi for my son who didnot know how to eat in popsicle:)

Enjoy the Kulfi my new style as it is or remove and cut, garnish with chopped nuts before serving.

Dates Milkshake!!!

This is a simple milkshake prepared for my son, who sometimes doesnot eat food properly. This is combi of iron and calcium. This can be had by anyone with haemoglobin

Ingredients
Dates - 3 nos(Deseeded)
Milk - 1 cup (boiled and cooled)
Sugar/Honey - 1/2 tspn.


Preparation Method


Soak dates in 1/4 cup of warm milk for about 1/2 n hour. Then grind it in blender or mixie with sugar and milk. Transfer it to a tumbler/glass.

Serve it warm or chill.

Notes -  You can increase the no of dates according to the size of tumbler.

Strawberry Milkshake

My son likes strawberry flavour a lot, first time I bought fresh Strawberries and tried the Milkshake. It was refreshing and good to beat the heat.

Ingredients
Fresh Strawberries -  6 nos
Sugar - 2 tspns
Water  -1/2 cup
Milk - 2 cups

Preparation Method
Grind strawberries, sugar and water to smooth paste and add milk and again whip to smooth paste.

Serve chilled or as it is.

Notes - Can use any milk or chilled milk.

Carrot Rice Payasam/Kheer!!!

Carrot Rice Payasam/Kheer was offering/prasadam to God and on India winning WC. You can also prepare this in pressure cooker method.




Ingredients
Rice - 2 tablespoons
Milk - 1/2 lt (Can use any type of milk)
Sugar - 1/2 cup
Carrot -1/2 cup(Pureed)
Cashews - 2 nos
Ghee - 1 tspn
Pistachos/Cashews - 2 tspns(chopped)



Preparation Method
Wash and rinse rice in water.
In thick bottom vessel, add milk and rice. Keep it in low flame.
Wash carrot, scrape skin, cut into small pieces. In a mixie/blender add carrot, cashews 2nos and little milk. Grind to paste. Keep aside.
Have an eye on the milk, keep stirring continuously it will overflow.
Add the carrot paste. Mix well.
Let the rice cook and raw smell of carrot goes. The milk will reduce little bit.
Add sugar and stir continuously. Keep it in low flame.
Heat a pan, add ghee and nuts. Wait till its brown.
Garnish it.


Carrot Rice Payasam is ready to serve. Enjoy it warm or chill.

Ginger Tea/Inji Tea/Adrak Chai/Teh

Tea/Chai is a traditional milk based beverage India. I have added ginger to add more flavour and its good for digestion and throat. This is going to my Healing Foods Ginger Garlic hosted here at Sara's Corner started by Siri.



Ingredients
Milk(Normal/Low Fat) - 1 cup
Water - 1/2 cup
Tea powder - 1 tspn
இஞ்சி/ Ginger/ आदरक/ ಶುಂಟಿ - 1 inch piece pounded
Sugar - 1 tspn or sugarfree

Preparation Method
In a vessel add all the ingredients and boil well. It will overflow but keep in low flame and stir with a spoon until it boils and quantity reduces a little.
Filter it and serve hot.

Flavourful Ginger Tea is ready to serve.

Apple Milk Dessert

Apple Milk Dessert is easy and quick dessert. I saw this recipe in one of the TV channel, I have modified slightly. My son is not eating apples because its crunchy. So tried this and he loved it and I managed to make him eat apple:-)

Serves - 2 persons
Ingredients
Grated Apple - 1/2 no
Milk - 1 cup
Water - 1/4 cup
Corn flour - 1/2 tspn
Low fat Condensed Milk -4 tspns(Can use sugar too about 4 tspns or Kova)
Cardamom powder - a pinch
Saffron - few strands
Badam for garnish


Preparation Method
In a kadai/wok, add water, cardamom powder allow it to boil. Add grated apple and cook(here you can also add 1 tspn of sugar and cook) till all water is abosorbed.
Transfer it to a bowl.
In the same kadai, add milk and boil.
Mix cornflour in milk or water with lumps, add the cornflour paste, saffron(kesari) and condensed milk. Mix well.
Let it boil in medium flame for few minutes until it becomes slightly thick.
Then add cooked apple and stir. After a minute off the stove.

Garnish with chopped Almond/Badam. Allow it to cool and chill for 1-2 hours before serving.

Apple Milk Dessert is ready to Enjoy.

Paal Payasam/Rice Kheer | without Condensed Milk- Method 2 and Awards!!!

Paal Payasam/Kheer is very popular sweet/pudding in India. This method is easy and simple. This can be tried by Bachelors too. Checkout my other method of payasam here.

Daily I have been preparing sundal today made payasam.

The colour of payasam will be this when its done in pressure cooker.


Ingredients
Milk - 1 litre(you can also use Low fat, Skimmed or any milk)
Rice - 2 tablespoons
Sugar - 1 cup(Adjust accordingly)
Cardamom/Elachi powder - 1/2 tspn



Preparation Method
In a pressure cooker, take a vessel which is  a bit long in height. Add milk, rice, cover it and pressure cook for 10-15 whistles. You can also see a colour change to pink.
Once steam is gone add sugar and cardamom and heat for 10mins till sugar dissolves. If you want it very thick and creamy, heat for longer time.

This get the flavour of condensed milk
































Note - Stand near and stir occasionally till its thick and reducing.

Paal Payasam is ready to serve. You can serve hot or cold.

Navaratna Kurma/Korma

Mixed Vegetables Kurma is a very tasty sidedish. This a mixture of all veggie cooked with dry fruits and pineapple.

Today I cooked this for my hubby's lunch box with chapathi.

This is mine and my hubby's favourite dish. Usually had at an restuarant. Thought of giving an surprise to him and cooked with love today.



Ingredients
Carrot - 1 no
Beans - 15 nos
Green Peas - 1/2 cup
Potato - 1 no
Cauliflower- few florets
Brocolli - few florets

Onion - 1no
Tomato - 1no
Green chilli - 2nos
Paneer/Cottage Cheese - 6 cubes
Pineapple - few pieces(Can or fresh)
Raisins - 1tspn
Cashewnuts - 6nos
Garam Masala - 1 tspn
Dhania/Coriander powder - 1 tspn
Red Chilli powder - 1 tspn
Oil and ghee - 1 tspn
spices - 1 no each
Milk - 1 cup
Cream - 3 tspns
Salt as per taste

Preparation Method
Chop all the vegetables to 1"piece. Cook them in pressure cooker without whistle for 15minutes with little salt and turmeric.
In a thick bottom kadai, add little oil, spices onion and tomato cook till its soft. Grind them to paste or you can also chop them and put.
In the same kadai add ghee and spices add this mixture and boil for sometime. Add all masala powders and mix well. Cook till raw smell goes.
Now add the cooked vegetables and boil.
Once its thick add milk and cream. Mix well. Allow it to boil.
Now add paneer cubes, raisins and cashews. Cook for 2mins and off the stove.
Garnish with chopped coriander/cilatro.

Navaratna Kurma or Korma is ready to serve. This can be served with chapathi/roti/naan. My Father-in-law tried with Bread and he liked a lot.

Oats Semiya Payasam/Kheer

Oats Semiya/Vermicilli Payasam is a sweet dish prepared with milk, semiya, sugar, oats and kesari/saffron. This is my new innovative recipe.

Saffron is very expensive ingredient which is taken by pregnant women in milk and also used to prepare sweets.

This recipe is going off to Oats Feast here in Sara's Corner and JFI Saffron hosted at Chef in you.


Ingredients
Semiya/Vermicilli - 1 cup
Oats - 2 to 3 tspns
Milk - 1/2 litre
Kesari/Saffron - a pinch (Soaked in 1/2 cup warm milk)
Sugar - 1 cup (As per your taste)
Condensed milk - 1/2 cup
Cardamom powder - a pinch
Ghee - 2 tspns
Mix of cashews n raisins - 2 tspns

Preparation Method
In a kadai, add 1 tspn ghee and dry roast the semiya till brown.
Soak oats in water.
In a thick bottom vessel, boil milk in low flame as it will overflow. When its started boiling add roasted semiya/vermicilli, sugar, condensed milk and mix well.
Once semiya is well cooked add oats and kesari/saffron.
Boil well till the milk thickens and reduces.
Garnish with cashews n raisins roasted in ghee.


Serving suggestion - Hot or cold.
