Maida Burfi |Cake!

Maida Burfi/Maida cake is very simple and easy sweet. I prepared this for this Deepavali, it was delicious. I just referred the video from Chitra on my instafeed. On 12th November, I did a cooking demo here in Pasir Ris East CC checkout the post here and here for what I prepared for a group of lovely ladies. Thanks to my kids and hubby for their support always.

Ingredients

.    Maida/all purpose flour - 1 cup
.    Sugar 1.5 cups (I used brown sugar)

.    Ghee - 2-3tablespoon
.    Elachi powder – 1 tspn
.    Food colour (optional)

.    vanilla or almond Essence optional

 



Preparation Method

·        Heat a pan add ghee, once its melts add maida and sauté well for 5-8 mins till it   combines and you will notice slight colour change. It will look like crumble.
·         Keep aside
·         In another kadai or pan add sugar n water make 1 string consistency n off the stove.
·         Add elachi powder food colour and mix well.
·         Add maida ghee mix n mix fully to get a mass.
·         Transfer to greased plate and spread neatly.
·         Cut when warm to desired shape. Allow to cool completely and store in air tight container.

Nippat Masala | Bengaluru Style Street Food

Nippat Masala is a popular street food in Bangalore.  I just love them at Rajajinagar, these are so delicious. After my vacation in Bangalore, I am craving for all these chaats. So I prepared this on a saturday evening with coffee.

You can also prepare this as a starter for a party.  You will love it.


Serves - 1
Ingredients
Nippat/Thatai- 8 nos (I have used AAB thatai) You can use big ones and break into pieces.
Onion - 1no chopped finely
Tomato - 1no chopped finely
Cucumber - 2 tblspn chopped finely
Carrot grated - 1 tblspn
Green Chutney as per your taste(click on name for recipe)
Sweet Chutney as per your taste (click on name for recipe)
Grated raw mango - 1 tablespn
Freshly chopped coriander/cilantro
Chaat Masala - 2 pinches
Salt
Mixture - handfull
Omapodi/Sev - handfull
Pori/Puffed Rice - handfull

Preparation Method
Arrange nippat on a plate.
Add one by one above ingredients in the same order on the nippat.

Nippat Masala is ready to serve. I love to add more sweet chutney:)

Enjoy this snack with hot coffee/tea.

Potato Bags | Snack Recipes | Party Starters| Kids Recipes!

Hi Friends,

I am taking a small break now and then from blogging as tied up with other things at home. I was feeling bored not blogging for few days. I will be back with the event roundup.

Today I am sharing an easy snack recipe.

I actually wanted to name it as money bags, then renamed it as Potato Bags. I prepared this on a sunday, when it was raining. My son enjoyed and was asking what is this amma...

Ingredients for dough
Maida - 1 cup
Omam/Ajwain/Carom seeds - 1 tblspn
Oil/ghee - 1 tspn
Salt
Oil for deep frying.

Stuffing
Potato Masal- As required(click here for recipe) I used the left over potato masal.



Preparation Method
Mix maida, ghee/oil, omam, salt with little water to make a dough. Rest it for half n hour.
Heat oil in a kadai/wok.
Knead well. Take little quantity of dough like lemon size and spread thinly with rolling pin to small circle. Cut with a lid to round shape. (Like poori)
stuff required quantity of potato masal, slowly close the edges to form a bag and press in centre. (You can take out extra dough on top if required)
Deep fry till golden brown.

Potato Bags are ready to serve. Serve hot with Green chutney or Ketchup. This can be a party starter and snack recipe. Kids will surely love it.

Vegetable Cutlet!!!

I love Veg cutlets and always had at restuarants in Bangalore. We get good ones when we are on train to chennai. This one is my Father in laws speciality and it was so yummy. Thanks for teaching me Dad. I had previously posted Potato Cutlet checkout the post.

This is a perfect starter for parties.


Ingredients
Beetroot - 1/2 cup
Carrot -1/2 cup
Potato -1/2 cup (Boiled and mashed)
Green Peas -2 tspns
Kadalai Maavu/Besan - 2  to 3 tspns
Bread crums - 1/2 cup
Red chilli powder - 1/2 tspn 
Garam Masala - a pinch
Onion - 1no
Curry leaves - few
Salt
Oil for deep frying


Preparation Method
Boil the potatoes and mash it. Keep it separately.
Chop all the vegetables into small pieces.
Cook all vegetables in pressure cooker except onion with very less water and salt for 2 whistles. Remove excess water. (If excess save it for soup and drink.)
Transfer it to a wide vessel. Slightly mash it when its hot.
Add kadalai maav/besan, onion, salt, red chilli powder, garam masala and make medium size balls.
Take in your palm slowly and firmly press once and coat bread crums on both sides. Don't over press, it may break while deep frying.
Heat oil in a kadai and deep fry till golden brown.

Serve hot with tomato ketchup or enjoy as it is.


Notes:

- You can also shallow fry instead of deep frying.
- You can also bake.
- You can also add chopped green chilli, I didnt add as it will be spicy for my kid and my inlaws. 
- You can do it without onion also.
- You can also add Pudina/Mint leaves.
