Cooking with love Uncle ~ Event Roundup!

Thank you friends for all your entries to Cooking with Love Uncle. Below is the roundup. Wish my brother Rakhi and everyone celebrating this festival.

My friend Mrs. Lalitha has sent me Urad Dal Vada recipe

Ingredients
Urid dhal - 1 cup
Raw rice - 1/4 cup
Ginger - 1 small sliced ginger
Green chilli - 4 nos.
Onion -  1(chopped finely optional)
Garlic - 2(optional)
Curry leaves - one leaflet

Preparation method
Soak Urid dhal and raw rice for 45 mins. Wash it with water and drain it for a while. Add ginger, garlic and green chillies and grind it nicely adding very little water in a mixer grinder. 

Take the paste out in a bowl. Add some curry leaves and finely chopped onion. Heat refined oil in a kadai. Flatten the paste in a small banana leaf or in a oil greased plate and deep fry in the oil. Take it out when it is golden brown. Serve hot with coconut chutney.

Rainbow Food for Toddlers Event Roundup!

Vanilla Cup Cake by Shewtha
Ingredients:

     1. Plain flour (Maida ) -  2 cups
     2. Sugar - 7 - 8  tblspoons
     3. Condensed Milk - 1/2 tin ( Approximately 250 ML)
     4. Buttermilk - 12 tblspoons . Incase of yogurt then use 6-7 spoons and mix sufficient water.
     5. Sunflower oil - 10 - 12 tblspoons
     6. Salt - 1/4 tsp
     7. Soda Bicarb - 1/2 tsp
     8. Baking Powder - 1 1/2 to 2 tsp
     9. Vanilla Essence - 6 - 8 drops.

Preparation:

   1. First preheat the oven to 175 - 180 celsius. 
   2. In a bowl mix and sift the dry ingredients twice or thrice.
   3. In another bowl mix all the wet ingredients and whisk either by a wooden spatula or hand blender for 4-5 minutes
   4. Now slowly add the dry mixture to the wet mixture and keep whisking so that the mixtures are well blended without any lumps.
   5. Now arrange 12 paper cups in a baking tray or in a cup cake tray and fill the batter till half way in the cups.
   6. Bake for 20- 25 mins or till a toothpic inserted comes out clean from the cakes.
   7. After baking allow the cup cakes to cool completely.
   8. Decorate with Cream, Edible food pearls, Sugar spots etc as per ur wish.

Vanilla essence can be substituted by any other essence as well.

Cooking with Love - Uncle | Event Announcement!

Dear Friends,

This month one of the host was not able to announce the event, so I am taking this opportunity to host as my uncle/chithappa passed away  on December 20th 2011. We were all living in joint family, so this uncle is very close and attached, he used to take me to school, college, office. He was loving, patient and caring. He was diabetic and was under dialysis and passed away suddenly. I was shocked as I met everyone on 19th and told them will be leaving on 21st Dec to SG. Still I cannot believe this has happened. I saw his face and extended my ticket to do all rituals. Personally I will be posting his favourite dishes too and dedicate this event to him. He has a son who is studying MBA and wife also passed away 4 yrs back, just remembring my family back in Bangalore.


May his soul rest in peace and give strength to my cousin to his future.

Healthy Food for Healthy Kids - Rainbow Food for Toddlers | Event Announcement!

This month I am guest hosting Healthy Food for Healthy Kids - Rainbow Food for Toddlers event started by Nithu Bala. I am happy to host and thanks for the opportunity.

Preparing healthy food for kids is easy but making them eat is slightly difficult. Everyone would have prepared different dishes for your kids. So send them to the event. Its good start all kinds of foods to the baby, so they will know the taste and will not be fussy later on. If you ignore that this food should not be given now and all then after 4 to 5 yrs you have have problem in making them eat, which will end up preparing dishes of their favourite choice.

Its not necessary to make them eat a lot, just 1 or 2 spoons or mashed fruits will make the taste buds used to the dish. So, its good to start early and make them eat, then you need not worry later. Patience is really important and positivity is more important. If the child is not eating, leave them for 5 mins and then again try till they eat. Don't worry only till they get used to the taste, you have to be patient later on they can eat  anything you give.

Some general notes from Nithu before you cook.

There are few important things that we should be keep in mind while we prepare food for babies. 

1. Please wash hands before preparing baby food. 

2. Wash fruits and vegetables before cooking. 

3. Wash blender jar in clean water before blending anything for your little one.

4. Don't over cook or under cook. 

5. Please avoid additives like sugar, salt & fat. If you still want to use, keep them in minimum.

6. Most important thing is consult pediatrician regarding the food that may pose allergic risks to your baby.

7. Please don't use honey till your little one is one year old. Honey may cause rare form of food poisoning in babies. 

8. Avoid nuts in baby food preparation as they may pose allergy. 

9. Use separate vessels and a small pressure cooker to prepare baby food.

1. Post a  healthy vegetarian recipe (No eggs allowed) between 10th June and 10th July-2012 for toddlers(1 -3 yrs) with colored fruits and vegetables. (Please utilize only the natural colors from fruits and vegetables in the recipe.
No artificial colors are allowed. Post an attractive and colorful picture of the recipe. 

2. Link your entries to this announcement and Nithu's event announcement page. Logo is mandatory as it helps spread word.

3. Don't worry if you have your recipes in your archives. Just update the post with the link to this announcement and Nithu's event announcement page. Adding logo is important.

Flavours of Lebanon | Event Annoucement!


This month I am happy and excited host my favourite cuisine, Lebanese. This cuisine has many vegetarian dishes and it became my favourite cuisine when we stayed at Panama City. There were many Lebanese Restuarants. Thanks Nayna for giving me this opportunity for Guest hosting her event.


We are now on our culinary journey to Lebanon in the “Flavors of Series 2 around Asia” by simply.food guest hosted here at Sara's Corner.


Lebanese Republic is a country of East Mediterranean/Middle East. It is bordered by Syria to the north and east, and Israel to the south. Lebanon's location at the crossroads of the Mediterranean Basin and the Arabian hinterland has dictated its rich history, and shaped a cultural identityof religious and ethnic diversity.


Lebanese cuisine includes an abundance of starches, fruits, vegetables,fresh fish 
and seafood; animal fats are consumed sparingly. It also includes copious amounts of garlic and olive oil, often seasoned by lemon juice, olive oil, herbs, garlic and lemon are typical flavours found in the Lebanese diet. Most often foods are either grilled, baked or sautéed in olive oil; butter or cream is rarely used other than in a few desserts. Vegetables are often eaten raw or pickled as well as cooked. Herbs and spices are used and the freshness of ingredients is important. The coffee served in Lebanon is sometimes a variation of Turkish coffee, but a dark type of coffee is the main type served.(courtesy wiki.org)
