Vellarikaai/Southekayi/Cucumber Salad

Again going to Bangalore, we used eat a lot outside and this is also one of them. Many might have seen Southekayi selling near parks and schools. Its very refreshing and hot.

I have used Japan Cucumber where in I could not go to Little India to get the normal one. It almost tasted the same.



Remove skin and cut 1 no of cucumber into cubes or small slices. Add salt and required green chutney or pudina chutney(Grind Pudina/mint leaves wtih green chilli to fine paste) and mix well. Add little lemon juice.

Salad is ready. This can be had as it is or with lunch or dinner.

Corn Sprouts Salad

Corn Sprouts Salad is so simple and healthy one. It needs no cooking. I make this for my hubby's lunch box quiet often.


Ingredients
Corn Kernels(I used Tinned) - 4 tspns
Green Gram Sprouts & Horsegram sprouts - 3 tspns
Tomato - 2 tspns(chopped)
G chilli - 1 no(chopped)
Salt 2 pinches
Coriander leaves for garnishing.

Preparation Method
Mix all the ingredients in a bowl and serve.

Corn Sprouts Salad is ready to serve.

Am back with Green Gram Carrot Salad

Hi Friends,


Am back after my break in India. Thank you for all your comments and entries for CWS - Cumin Seeds Event.

If you have not sent in your entries do send it soon as event ends on 31st May.

Here goes the recipe for simple and healthy salad.


Sprouted Green Gram(Raw) - 1 cup (How to make sprouts? click here)
Carrot (Grated) - 2 tspns
Fresh Coconut(Grated) - 1 tspn
Salt
Lemon juice - 1/2 tspn(optional)

Mix all the above in a bowl and Serve. This can be served anytime and for lunch box too.

Fresh Fruit Salad

A simple and healthy fruit salad. We usually prepare salads on weekends and enjoy it for 2- 3 days. My hubby who loves fruits is always ready to help me in cutting them....:-)


Fruits I used are
Papaya, Apple, Orange, Banana, Grapes, Sapota/Chickoo, Pomogranate
Honey - 2 -3 tspns
Sugar - 1 tspn(Optional)

Method
Wash and chop all fruits into small pieces.
In a wide bowl put all the fruits, add honey, mix well and chill it in fridge for 1 hour or more.

Serve it with ice cream or as it is.

Radish (Mulangi) Salad

Hope you all celebrated Deepavali well by bursting crackers and sharing love also with lots of sweets...Belated Wishes to all friends.
You might be wondering am not seen in blogging I have been busy with my sister and family who came down from India for Diwali. Was tied up and now taking out time for blogging.

We celerated Diwali with lots of sweets and guests at home. I prepared Haalbai, Rasagulla and Thekuzhal also watching movies on TV.

Radish(Mulangi) is very healthy vegetable. I usually make sambar with it. Also I love Salads am giving recipe for simple and easy salad.


Ingredients

Radish(Mulangi) - 1 no
Grated Coconut - 2 tspns
chopped Green Chilli - 1no(As per your taste)
chopped Coriander(Cilantro) - Handful
Salt
For Seasoning/Tempering
Oil - 1 tspn
Mustard - 1/4 tspn
Urad dal - 1/4 tspn
Asafotida(Hing) - a pinch
Preparation Method
Wash, remove skin and grate mulangi(radish)
In a bowl, add radish, grated coconut, salt, green chilli, coriander and mix well.
In a pan, add oil, mustard, wait till it splutters now add urad dal and Asafotida. Mix well and serve.
Garnish with coriander.

Raitha

Raitha is very simple and easy. This is very tasty and healthy.


Ingredients
Onion - 1/2 no
Tomato - 1/2 no

Cucumber - 1/2 no

Thick curds - 2 cups(Thair/Dahi/Plain Yogurt)
Ginger - a very small piece

Pepper powder - a pinch

Green chilli - 1/2 no - as per your taste

Green coriander leaves - 2 tspns(Kothamalli/Cilantro)
Salt


Preparation Method


Wash and chop finely onion, tomato, cucumber, ginger, green chilli and coriander leaves.

In a bowl, mix all the above with curd, salt, pepper powder.



Raitha is ready to serve.

Notes - If you are preparing in more quantity can increase the ingredients accordingly.

Dahi Sev

Dahi Sev is very tasty. You can say it a chaat or salad. Its from North India. Its a mix of Dahi called yogurt(curds) in Hindi and Sev a fried savoury. It is very simple and easy to prepare.

Ingredients
Sev (Oma Podi) - 1 cup
Dahi(Thair, Plain Yogurt/Curds) - 1 cup
Chopped Onion - 1 no
Chopped Tomato - 1no
Chaat masala - 2 pinches

Chopped Kothmir(Coriander leaves/Cilantro)- 1 tspn
Salt a pinch

Preparation Method
In a bowl mix onion, tomato with a pinch of salt.

Then beat dahi to smooth then mix.
Top it up with Sev, chaat masala and Kothmir.

Yummy Dahi Sev is ready to serve. Eat immediately after mixing before sev becomes soggy.

Fruit Salad

Fruit Salad is very healthy. It can be had before or after dinner or lunch. By topping it with ice cream kids will love it....

Ingredients
Apple - 1 no
Pear - 1 no
Mango - 1 no
Pineapple - 1 no
Banana - 2nos
Grapes (Seedless) - 20 nos
Water melon - few pieces

Ice cream as per your choice of flavour. I have used La Cremeria "Vanilla Cashew Delight".

Preparation Method.

Wash and cut all fruits into small and tiny pieces(If you dont like it with skin you can remove it and then cut). Water melon into small cubes. Put in a bowl and add little sugar. Keep it in fridge for 1-2 hours.

Then later can be served with ice cream or as it is. Fruit Salad is ready to eat.



Variations: Cut all fruits into small cubes and add salt and pepper.
Can also mix custard powder.
Can also add honey.

Green Gram and Pomo Salad

Green Gram and Pomogranate or Pomegranate Salad is very healthy. Sprouted grams are rich in proteins and carbohydrates. Pomogranate pearls which is in red colour improves blood and good for health. This salad is very easy to prepare.
Method


Soak 1 cup of green gram in water in the morning. By evening remove water and close with a lid and keep. So by next day morning it will be sprouted. Take half cup pomogranate pearls and mix with sprouts.


To make it more tasty add little salt, season with 1 tspn oil, mustard wait till it splutters the add a pinch of hing and squeeze a lemon.


Green gram and Pomogranate salad is ready to serve. It can be served with lunch or dinner. Also packed in lunch box and munched in breaks.

Kosambari

Kosambari is a Salad popular and done in Karnataka. Its done on most of the auspicious and festival occasions like sri ramanavami, friday poojas, etc and distributed among ladies. A very easy to prepare dish, very delicious and good for health.

Ingredients
Pasi Paripu(Split green gram) – 1 cup
Grated coconut – 1 cup
Grated carrot – 4 tspns
Green chilli – 1 no(optional)
Coriander leaves - 2 tspns
Salt
Chopped cucumber - optional
For seasoning
Cooking oil – 1 tspn
Mustard – ½ tspn
Asafotida – 1 pinch
Preparation Method
Soak Pasi parpu(Split green gram/Moong dal) for 4-5 hours.
In a bowl, add carrot, coconut and mix well.
Add finely chopped green chilli.
Season it with oil mustard and asafetida.

Add salt and mix.
Garnish with chopped coriander leaves.

Kosambari is ready to serve.


PS - If quantity is more, portion of it can be kept in refridgerator without adding salt.

Cucumber Salad

This Salad is very easy to prepare and tastes different.




Ingredients

Cucumber - 1no
Grated coconut - 4 tspns
Sunflower oil or olive oil - 1tspn
Mustard - 1/2 tspn
Split Urad dal - 1/2 tspn (optional)
Asafotida - 1 pinch
Coriander leaves (cilantro) - 2 tspns

Salt to taste

Preparation Method

Wash and remove the skin of the Cucumber.

Cut the cucumber in small pieces
In a bowl, add the cucumber, grated coconut, salt.
In a pan, heat the oil, add mustard and asafotida
Add split urad dal and wait till its brown.
Then add this to the salad and mix.
Garnish with coriander leaves(cilantro) and serve.
