Thakalli Thokku | Tomato Pickle!

Thakalli Thokku | Tomato Pickle is very tangy and tasty recipe. This is a traditional dish taught by my Mother-in-law who makes this to her perfection,  as in Bangalore we used to do Gojjus. It was new to me and I loved it a lot. Its also my family favourite sidedish. A good timesaver and accompany many dishes. I always prepare and store it in my place, when I find really red tomatoes in Little India cannot miss it.


Ingredients
Fresh Red Tomatoes - 10 nos
Turmeric powder - 1/2 tspn
Red chilli powder - 1 tablespoon(As per your taste adjust)
Fenugreek seed powder - 1/2 tspn
Cooking Oil - 1/2 cup (I use gingely oil or olive oil)
Mustard - a pinch
Hing/Asafotida - 1/4 tspn
Salt

Preparation Method
Wash, cut and chop all the tomatoes into 4 pieces and keep aside.
Heat a heavy big kadai/wok, add oil, a pinch of mustard and hing.
Once mustard pops, add the tomatoes and mix.
Leave it for 5 mins. Then add, turmeric powder, red chilli powder, salt and mix.
Close it with lid, as it will pop out while boiling and cook till the tomatoes are soft.
It will be too soft  and watery. Continue to close lid.
The colour will change from light red to dark red.
When its going thick add venthaya podi/fenugreek powder. Mix and check for salt and spice levels.
if you wish you can add. Usually, adding the spice and salt little more is better, when it cools, it will be to correct level. Do not cook for long after adding venthaya podi, this will make bitter.

When the gravy is thick and oil leav es the side and good aroma. The dish is ready. Allow it to cool.

Store in clean glass or plastic bottle.  This can be sidedish for kootu rice, curd ricechapathi, Idlis, Dosas and Adai .

Methods of using tomatoes in thokku. You can use any method.

1. Just chop them and cook
2. Remove seeds and cook.
3. Remove seeds, skin, grind to fine paste and cook.

Notes - This can be stored upto 15days in fridge.
Do not put stainless steel spoon and store, try to put wooden spoon.

How to prepare fenugreek powder at home.
Fenugreek powder /Venthaya podi - Take 1 cup or required amount of seeds dry roast in a kadai in medium flame to slightly brown. Allow it to cool and grind it to a fine powder. Store in air tight container for later use.

Nellikkai Urugai | Amla | Gooseberry Pickle Recipe!!!

Nellikkai/Amla/Gooseberry is very good to health and is rich in Vitamin C. I had previously posted Nellikkai Rice recipe here, checkout if you had not seen.

Ingredients
Nellikkai/Amla/Gooseberry - 10 nos(Big ones)
Red Chilli Powder - 2 tablespoons(As per your taste)
Oil - 1/2 cup (any cooking oil I use Gingely Oil/Nalla Yennai or Olive Oil)
Mustard - 1/2 tspn
Hing - 1/4 tspn
Venthayam podi/Fenugreek seeds powder - 1/2 tspn
Turmeric - 1/2 tspn
Salt as required


Preparation Method
Boil water in a vessel, add turmeric and little salt.
Wash and wipe nellikkai put them in the boiling water. Leave it for 4 to 5 hours.
Once its almost cool, takeout and cut them sidewards. Remove the seed.
Heat a kadai, add oil, mustard wait till it splutters, add peringayam. Add the chopped nellikai and saute for 2 to 3 mins. Add salt, venthiya powder and red chilli powder. Mix all and off the stove. Allow it to cool and transfer them to glass or porcelein container.
Mix well and leave it for a day. Keep mixing in intervals with a wooden or plastic spoon.

Yummy Nellikkai Pickle is ready. A perfect for curd rice/Kootu rice.

Notes:

- For longer shelf life, store in refridgerator.
- If you are using steal spoon, do not leave it in the box as it will rust.

Lemon Pickle

This has been lying in my drafts since long time....Pickles time....My in laws like pickles a lot, so this Lemon Pickle is for them. Even though I don't eat pickles, I have stock for my family.


Ingredients
Lemon - 20 nos(Nice yellow in colour)
Red Chilli Powder - 2 tablespoons(As per your taste)
Oil - 1/2 cup (any cooking oil I use Gingely Oil/Nalla Yennai or Olive Oil)
Mustard - 1/2 tspn
Hing - 1/4 tspn
Venthayam podi/Fenugreek seeds powder - 1/2 tspn
Salt as required


Preparation Method
Wash, wipe and cut lemon into small squares. In a glass bowl or porcelein bowl, add lemon, salt and red chilli powder. Mix and leave it for 1 to 2 hours.
Then season it with oil, mustard wait till it splutters. Off the stove add Hing(Asafotida) and venthaya podi.
Mix well and leave it for a day. Keep mixing in intervals with a wooden or plastic spoon.

Yummy Lemon Pickle is ready. A perfect for curd rice/Kootu rice.


Notes:

Mangai Inji Urugai/Mango Ginger Pickle

Mangai Inji/Mango Ginger is a traditional Tamil Brahmin pickle. This has both flavours mango and ginger. This is available in India in Aadi Masam. But it was available at Little India. I have learnt all these recipes after marriage from my Mother-in-law. My hubby and in-laws like this a lot. Its good for digestion.


Ingredients
Mangai Inji/Mango Ginger - 100 gms
Green Chilli - 10 nos
Lemon Juice - 1 tspn
Salt as per taste


Preparation Method
Wash, remove skin and chop into small pieces. Chop green chilli also into small pieces.
In a glass bowl, add both and mix with salt and lemon juice.



















Enjoy Mangai Inji/Mango Ginger with Curd Rice.

Notes - Can be stored in air tight container for about a week.

Manga Thokku

Mango Thokku is easy and very tasty dish. Its a kind of pickle.

Ingredients
Raw Mango (Big) - 1 no
Red chilli powder - 1 tspn (as per your taste)
Oil - 1/4 cup
Asafotida(Hing) - 1/4 tspn
Mustard - 1/2 tspn
Venthayam powder (Fenugreek seeds powder) - 1/2 tspn (Roasted and powdered)
Salt

Preparation Method
Remove(Scrap) skin of the mango and grate it finely.
In a thick bottom kadai, put oil, mustard wait till it splutters. Add Asafotida(Hing).
Now add grated mango and cook.
When it is half cooked add salt and red chilli powder. Mix well.
It has to cook well in oil. Wait till the oil seperated to the sides.
Now add venthayam powder and mix well.


Manga Thokku is ready to serve. It can be mixed with rice or side dish for curd rice, dosa, idli.

Instant Manga Urugai (Mango Pickle)

Am back after a short vacation for my son's 1st year Birthday with Manga Urugai (Mango Pickle) Recipe.

Instant Manga Urugai (Mango Pickle) is very simple and tasty pickle. A very easy to prepare in 15mins. A good combination with curd rice. A meal is not complete without pickle in many occasions like marriages.




Ingredients Mango (Raw) -1 no
Oil - 2 tspn

Red chilli powder - 1 tspn (as per taste)

Mustard - 1 tspn

Venthayam(Fenugreek seeds) - 2 tspn
Salt to taste


Preparation Method
Chop mango with skin into small pieces and put in a bottle.

Put salt and red chilli powder and mix well.

In a sauce pan add 1 tspn oil and fry venthayam till brown. Remove and grind to powder.
Add 1 tspn oil , asafotida, mustard seeds and wait till it splutters.

Add all these to the mango and mix well.



Instant Manga Urugai (Mango Pickle) is ready to serve.

Notes - Pickle can be stored upto 1 week in refridg
erator.
