Easy Homemade Strawberry Jam without Agar Agar/china grass!

Strawberry jam is my kids favourite one, my friend Rekha suggesting not to buy store bought ones which is of high sugar and can be easily prepared at home.

Tried this and it was yumm. It was finished the same day.

Ingredients
Strawberry - 15 nos
brown sugar - 1/2 cup (adjust accordingly)
vinegar/lemon juice - 1 or 2 drops (optional)

Preparation method
- Wash and grind strawberry with water to fine paste.
- Heat a kadai, add the ground strawberry and cook for 15 mins.
- Add sugar and cook till its shiny and becomes jam consistency.
- Off the stove when its little semi liquid consistency. It will become thick once cooled.
- Add lemon juice/vinegar if you need to preserve or making large quantities.
- I didn't add them, just adjusted sugar accordingly and finished same day.


Note : Nowadays just making what is required for a day or two and finishing it. Not storing for later use. But you can do and keep handy for weekends or short trips.
- Can use non stick pan too.

Fresh Melon Plum Drink | Summer Specials!

This is a very different combo.

My dad brought plums and it was too sour. So today I mixed it with water melon and the drink was refreshing. It was sour and sweet.

While taking photo my son kept his bus since it was also red in the background:-)


Ingredients
Plum - 2nos
Watermelon - 2 big cups/1/4 fruit
Sugar/honey - 2 tblspn(as reqd)
Water if reqd.

Preparation Method
Cut fruits into cubes and blend all ingredients in a mixer.
Strain the juice in a glass.

Fresh Melon plum drink ready.


Notes - Mint/Pudina leaves can also be added.
A small piece of ginger also can be added.

Homemade Pulpy Orange | No Sugar | Natural Summer Drinks!

Homemade Pulpy Orange is a refreshing energy drink. This is my son's favourite drink, everytime we go out he likes to buy only pulpy orange. This week is a vacation for him and just trying make his favourite dishes. I love to drink fresh fruit juices at home or outside, here in SG they will not add sugar just fresh.


Ingredients
Oranges - 3 nos

Preparation Method
Take the manual  squeezer(mine is with jar), wash and cut the orange into half and turn it around till no juice is left. Repeat the same with all the oranges. Put the pulp also in the juice, remove the seeds.


Serve it chilled or with ice cubes. I don't add ice or serve chilled since we both are allergic to cold.

Homemade Pulpy Orange juice is ready to drink.

Notes - My observe
Do not make the juice the day you buy orange leave it for 3 to 4 days outside. Then it will be sweet. If you prepare juice the sameday it will be sour sometimes.

Strawberry Rose Juice | Summer Specials!

Strawberry Rose Juice is a new mix of fresh strawberries and rose essence. Since my son loves both thought of mixing and he enjoyed the juice.

Serves - 1

Ingredients
Strawberry(Korea)- 6 nos
Rose Essence - 2 tablespoons
Chilled water - 1 glass
Sugar -  1 tablespoon
Ice cubes as required

Preparation Method
In a blender/mixie put all the ingredients and blend to smooth juice. Strain it.

Serve with ice cubes.


Strawberry Rose Juice is ready to serve.

Homemade Mixed Fruit Jam | Step-by-Step Recipe Type 1!

Homemade Mixed Fruit Jam is a simple and delicious spread mix of fruits. I never thought would be making jam at home:) but when I was talking to my friend Rekha about it she told me a simple recipe for the jam. I have slightly changed the recipe, it tasted delicious. Kids will surely love!

Step by Step Pictorial Recipe


Soak agar agar strands in water.


Wash, remove skin, seeds and chop all the fruits into  chunks.

Heat a non stick pan, put the soaked agar agar with 1/2 cup water in low flame. Allow it to dissolve.

Grind all the fruits to smooth paste.


When the agar agar is fully dissolved, add the grounded fruit mixture into this and mix well.

When you feel the raw smell is gone add sugar and stir.

Mix and keep stirring

It will be in liquid consistency

 Remove the paste from sides and keep stirring till its bubbling up and thick.


Off the stove. Add the vinegar.


When its thick and finally looks shiny

Ingredients
Strawberry - 6 nos
Apple - 1no
Banana - 2nos
Guava(white) - 1 no
Brown sugar - 1 cup(As per your taste)
Vinegar - 1/2 tspn
Agar Agar/China Grass - few strands
Preparation Method

  The next day served with Wholemeal Bread/Toast. Enjoyed.

Iced Watermelon!

After the refreshing watermelon juice, I had leftover watermelon tried to prepare for my son. Actually wanted to prepare watermelon sorbet but came up with this.This is simple and easy ice cream.



Ingredients
Watermelon  juice - 1 tall glass
Condensed milk - 1 tspn
Cardamom/Elachi powder - a pinch
Sugar - optional



Preparation Method
Blend all the ingredients in a blender/mixie. Strain it.
Pour it in the icecube moulds and freeze for 1 hour or till its just set.

Serve immediately.

Iced Watermelon is ready.

This can be done with Mango too.

You can also add these cubes to the Watermelon juice.
Notes - If you dont have condensed milk you can just add sugar.

Watermelon Juice ! Summer Special!

Its been quite hot in the morning and noon. Heard in India also its very hot. But in Singapore the weather is unpredictable, its just raining so heavily. Check out the other Summer Specials here.
































Serves - 2 pax

IngredientsWatermelon - 1/4 no of a whole fruit or 2 cups cubed.
Sugar or honey - 1 tspn
Ice cubes - few (optional)
Water as required
Can also add a pinch of Black salt or chaat masala.

Method
In a blender/mixie add watermelon, water, sugar and grind.

Take serving glass add ice cubes and add the juice. (I have dipped in sugar on the rim)
Add a pinch of black salt or chaat masala on the top.
A few pieces of the fruit too.

Such a refreshing juice.

Watermelon Juice is ready to serve.

Orange Pineapple Juice | Jugo de Naranja Piña!!!

Orange Pineapple Juice | Jugo de Naranja Piña in Spanish is very refreshing drink.


Ingredients
Fresh Orange Juice - 3/4 cup(Juice of 2 oranges)
Fresh Pineapple - Juice of 4 slices
Sugar  or honey - 1 tablespoon
Water as required

Preparation Method
Take a tall glass, add orange juice and sugar. Mix well.
Slowly add fresh pineapple juice on top.

Garnish with orange and pineapple fruit pieces and ice cubes.

Serve it Chill...Enjoy!!! Slurp....Happy Weekend!!!

Notes - I have used fresh fruit juices, you can replace by store bought juice too.

Fresh Fruit Salad

A simple and healthy fruit salad. We usually prepare salads on weekends and enjoy it for 2- 3 days. My hubby who loves fruits is always ready to help me in cutting them....:-)


Fruits I used are
Papaya, Apple, Orange, Banana, Grapes, Sapota/Chickoo, Pomogranate
Honey - 2 -3 tspns
Sugar - 1 tspn(Optional)

Method
Wash and chop all fruits into small pieces.
In a wide bowl put all the fruits, add honey, mix well and chill it in fridge for 1 hour or more.

Serve it with ice cream or as it is.

This recipe along with Kosambari and Green Gram and Pomo Salad is going off to Divya's Show me your Salad Event.

Pineapple Kesari (Kesari Bath)

Kesari Bath is a famous sweet in South India. In Bangalore its one of fast moving breakfast with a combination of Upma or Karabath. I have had this in most of marraiges for breakfast in India.

Its a sweet dish cooked with semolina(suji) and sugar. This recipe is in combination with pineapple. The taste is yummy.


Ingredients

Rava(Semolina/Suji) - 2 cups
Sugar - 2 1/2 cups (As per your taste you can reduce or add)
Water - 5 cups
Pineapple - 2 cups(Chopped finely)
Ghee(Nai) - 1 cup(you can add or reduce)
Pineapple essence - 1 tspn(Optional) I have not used
Cashews/Raisins - 2 tspns fried in ghee.
Saffron colour - a pinch

Preparation Method

Roast the rava with 1/2 tspn ghee till its little brown.
In a thick bottom kadai/pan/wok keep hot water little less than that of making upma. Add pineapple, colour and 1 tspn ghee. Wait till pineapple is half cook.
Once its done reduce flame, slowly add rava and mix well without allowing to form lumps.
Once this is cooked add sugar and mix well.
Add leftover ghee and mix well. Wait till no water is left.
Garnish with cashews and raisins.

This can be served as it is or with Upma.

Tip - When water is boiling add 1 tspn ghee so kesari won't stick on the bottom of the kadai.

Life - The leftover can be had within 2 days even without storing in refridgerator.
