Thaalaga Kozhambu | Thiruvadirai special! Contribution by Latha Ganesh!

This recipe is contributed by my Sister in law Mrs. Latha Ganesh from Bangalore. I will be adding the photo soon.
 
This is a trademark dish of Tirunelveli. it is called THAALAGAM. made on Tiruvadhirai.
.
Ingredients for roast:
Black Thil Seeds: 3 tbsps(Main ingredient)
Raw Rice : about 2tbspns
Toor Dhal: 1tbspn
Red Chillies - 2 nos(As per your taste)
 
Vegetables:
The most important veggie for this is Pumpkin- 1/4kg.
Vaazhakkai/Raw Plantain - 1no
Carrot - 2nos
Beans - 100 gms
Mochai - 100 gms
Peas - 100 gms
Chayote/Chow chow - 2nos
 
Method:
Soak Tamarind in water about lemon size
Dry roast all the ingredients to roast, add one half of a coconut n make a paste or powder.
Cook the veggies with salt n turmeric. Add tamarind pulp, bring to a boil. Then add ground paste or powder
to the veggies. Boil well, for about 6-8mnts.
Grate some jaggery with knife n add to the Thaalaga kozhambu and stir well.
 
Season with mustard  and curry leaves. (no Peringayam)
 
This recipe does not require cooked Toor Dhal separately as there is Rice for the thickness. The Flavor of the Till seeds is the main part of this recipe.

Mathan/Sweet Pumpkin Sambar | Inji/Ginger Pachadi | Traditional South Indian Thali!

Let it be festivals or any occasions, at home we will have thali prepared and served on Banana Leaf. I have served in this steel thali plate, it was given by my grandmother with other utensils for my wedding.

Recipe for Mathan/Sweet Pumpkin Arachuvitta Sambar. On all special festivals and occasions Arachuvitta Sambar should be prepared - This is my family's favourite sambar.

Parangikai/Mathan/Sweet Pumpkin -  1/2 kg
Tuvram Paruppu | Toor dal - 1/2 cup
Turmeric powder - 1/2 tspn

For Grinding
Dhaniya /Coriander -  2 tablespoon
Channa Dal - 2 tspns
Dry red chilli - 4 nos(As per your taste)
Katti Peringayam/Asafatida/Hing - a small piece/1/4 tspn
Venthayam/Fenugreek seeds -  2 pinches
Fresh grated coconut - 1 /2 cup

Preparation Method
Wash, remove skin and seeds. Cut the mathan into medium cubes.
Cook Toor dal in pressure cooker with water for 4 to 5 whisltes and keep aside.
Heat a Kadai, add 1/2 tspn oil and fry all the ingredients under "for grinding" till the dal is brown. Allow it to cool and grind with little water to smooth paste.
Boil tamarind water and mathan with little salt and tumeric.
Once the mathan is boiled slightly soft add the grinded mixture and dal.
Boil well. It should be semi liquid consistency as later it will become thick.
Season it with ghee, mustard, curry leaves.

Recipe for Inji Thayir Pachadi | Ginger Yogurt Raitha.

This simple pachadi is mostly prepared on auspicious occasions at my home.

Ingredients
Ginger - 2" piece
Green Chilli - 2 nos(As per taste)
Grated Coconut - 2 tablespoons
Curds/Yogurt - 1 cup
Salt
Chopped Coriander for garnish.

Preparation Method
Grind ginger, coconut, green chilli with little water and curds in blender to smooth paste. If you like ginger you can grind to coarse paste too. Mix in the curds. Garnish with coriander.

Inji Pachadi is ready to serve.

Notes - On all festivals dishes are prepared without onion and garlic.

Pavakkai Pitla | Bittergourd Gravy - Type 1 | Diabetic Recipe!

Pavakkai Pitla is very tasty sambar, I never knew this pitla until my mother in law told and taught me when she was here. I will be posting the traditional one, but this one I have changed a bit. I don't do anything for the bitterness as I just love the bitter taste in this. I had packed this for lunch to my hubby to office and everyone loved it.





































Ingredients
Pavakkai - 4 nos
Black Channa /Karuppu Kadale - 1 cup
Soya bean - 1/2 cup
Tamarind water - 1 cup
Tomato - 1no
Toor Dal - 1/2 cup

For grinding masala
Onion - 1 no
Whole Dhaniya seeds - 2 tablespoon
Channa Dal/Kadale paruppu - 1 tablespoon
Urad dal - 1 tspn
Dry red chili - 3 nos(As per your spice levels)
Few curry leaves

Seasoning
Oil - 1 tablespoon
Mustard - 1/2 tspn
Curry leaves few






























Preparation Method
Soak the dals overnite, pressure cook them with toor dal  separately upto 4 to 5 whistles.
Cut Pavakkai/Bittergourd into small pieces.
Heat a vessel, add bittergourd, tamarind water, tomato, a pinch of salt, turmeric and boil it.
In kadai, put 1/2 tspn oil, and fry all the ingredients under Masala grinding till slight brown.
Allow it to cool.
Grind to a fine paste with little water. Mash or whisk the toor dal with water.
Once the bittergourd is soft and cook, add the steamed dals, ground mixture, dal and allow it to boil well.

Season/Talipu with the above ingredients under seasoning.


Serve hot with steamed plain rice.

Vengaya Sambar | Arachuvitta Sambar | Tamil Brahmin Style!

Vengaya/Small Onion Sambar is very tasty sambar, this is very popular in South India. Remembring back at my home in India, they used not use onion often and garlic no entry in my house. After marriage am knowing the benefits of onion and garlic so started using them in my cooking. Occasionally they used to prepare this only with Ragi Mudde/Millet balls and it would be very tasty. I have previously posted a different version of Vengaya Masala Sambar, here.


Ingredients
Small Onions/Shallots - 20nos
Toor dal - 1/2 cup
Oil - 5 tspns
Tamarind - 1 lemon size
Jaggery - 1 small piece(optional)
Salt

For masala(grinding)
Coriander seeds (daniya) - 4 tablespoon
Dry red chilli - 4-6 nos (As per your taste)
Venthayam(Methi seeds) - 1/2 tspn
Fresh Grated coconut - 1 cup
Curry leaves - few
Onion - 4 nos

Preparation Method

Soak tamarind in hot water for few mins and squeeze the water.
Wash and remove skin of onion and edges of onions.Wash it again.
In a Kadai, add 2 tspns oil and fry the above masala ingredients without coconut till dal is brown. Transfer and Allow it to cool.In the same kadai, add 2 tspns of oil add onion and saute till soft. Add little salt.

Add coconut and few onions while grinding in mixie and grind it to a fine paste with little water.
Cook the toor dal, mash/whisk with water and keep ready.
Keep a vessel on stove and add tamarind water. Now add onion to this and allow it to boil and cook. Add salt and turmeric.
Add the grounded masala to it and boil.
Add few curry leaves.
Add dal mix well and allow it to boil. Add water if necessary.
Add salt.
Add jaggery for taste. Stir well and boil.(If you dont want you can skip jaggery part)


Seasoning
Heat oil and ghee in a kadai, add mustard, allow it to pop then add curry leaves.


Vengaya Sambar is ready to serve. It can be served with idlis, dosai or rice.

Notes - Since this is Arachuvitta it will become thick when it cools, so adjust water accordingly.

Keerai Thandu and Karamani Arachuvitta Sambar Type 1

Keerai Thandu (Greens Stem) is going to be wasted mostly but if its tender its good to use it. I have mixed this with Karamani(Black eyed beans) and prepared Sambar. This recipe is going straight to Nithu's Best out of waste Event.



Ingredients
Keerai Thandu - Chopped to 2 inch piece(Got out of 1 bunch of Greens)
Karamani (Brown or white) - 1 cup(Soaked and pressure cooked)
Toor dal - 1/4 cup ( pressure cooked)
Tamarind water - 1 cup
Salt

For grinding
Dhaniya seeds - 2 tspns
Channa dal - 1 tspn
Urad dal - 1/2 tspn
Dry Red Chilli - 3 nos(As per your taste)
Grated Fresh coconut - 1/2 cup

For Seasoning
Oil - 1 tspn
Mustard - 1/2 tspn
Hing/Asafotida - 2 pinches
Curry leaves - few


Preparation Method
Wash and Cook tender Keerai thandu (Greens stem) in tamarind water with turmeric and salt.
Add cooked karamani and boil it.
In a kadai, add 1/2 tspn oil and add for grinding ingredients stated above except coconut and saute till brown. Cool it and grind it to fine paste with coconut in a mixer/blender.
Now add this mixture and boil.
Finally add toor dal with salt and water.(See notes). Keep in low flame and stir occasionally.

Season it with oil, ghee(optional)mustard,(wait till it splutters) hing and curry leaves.

Keerai Thandu and Karamani Sambar is ready to serve with hot rice or chapathis.

Notes - * It can be semi-watery as sambar will become thick after sometime.
* People who have cholestrol and cannot use coconut can exclude it and prepare.
* Can pressure cook Karamani and toor dal at the same time in different vessels to save gas and time.

Pachai Payaru and Karamani Sambar

Pachai Payaru (Green gram) and Karamani (Black eyed beans) sambar is very tasty. It is very good for health. Its rich in proteins, so I make sure to use these once a week in my kitchen.


Ingredients
Pachai Payaru - 1 cup
Karamani (Brown or white) - 1cup
Curry leaves - 2 tspns
Oil - 2 tspns
Tamarind - 1 lemon size
Asafotida - 1 pinch
Salt

For masala(grinding)
Coriander seeds (daniya) - 1/4 cup
Dry red chilli - 4 nos
Kadala parap(Bengal gram) - 2 tspn
Uzhatamparap(Urad dal) - 2 tspn
Venthayam(Methi seeds) - 1/2 tspn
Grated coconut - 2 cups

Preparation method
Soak tamarind in hot water for few mins and squeeze it.
Cook Pachai Payaru and Karamani in pressure cooker for 3 whistles with water.
In a kadai, add 2 tspns oil and fry the above masala ingredients without coconut till dal is brown. Allow it to cool. Add coconut while grinding in mixie and grind it to a fine paste with little water.
Keep a vessel on stove and add tamarind water. Now add cooked grams to this and allow it to boil.
Add the grinded masala to it and boil.
Heat oil with little ghee or only oil and add mustard wait till it splutters, off the stove add asafotida and curry leaves.

MIx it with the sambar.

Pachai Payaru Karamani sambar is ready to serve. It can be served with rice.

Notes - You can reduce the masala as per the quantity you are cooking.
If it becomes thick, add water and salt and warm it.
Adding of toor dal is not necessary, if required you can add very little.

Vengaya Sambar(Onion Sambar)

A yummy mouth watering Vengaya sambar(onion sambar) with vendakka poriyal or beans poriyal combination is very tasty.

Ingredients
Onion - 2nos (Big)
Toor dal - 1 cup
Curry leaves - 2 tspns
Oil - 5 tspns
Tamarind - 1 lemon size
Jaggery - 1 small piece
Salt
For masala(grinding)
Coriander seeds (daniya) - 2 tablespoon
Dry red chilli - 4 nos
Kadala parap(Bengal gram) - 2 tspn
Urad dal - 1 tspn
Venthayam(Methi seeds) - 1/4 tspn
Grated coconut - 2 cups
Cinamon (pattai) - 1 small piece
Preparation methodSoak tamarind in hot water for few mins and squeeze it.
Chop onions to medium size pieces.
In a Kadai, add 2 tspns oil and fry the above masala ingredients without coconut till dal is brown. Add coconut while grinding in mixie and grind it to a fine paste with little water.
In the same kadai, add 2 tspns of oil add onion and saute till soft. Add little salt.
Cook the toor dal and keep ready.
Keep a vessel on stove and add tamarind water. Now add onion to this and allow it to boil.
Add the grinded masala to it and boil.
Add curry leaves
Add dal mix well and allow it to boil. Add water if necessary.
Add salt
Add jaggery for taste. Stir well and boil.
Season it with mustard.



Vengaya Sambar is ready to serve. It can be served with idlis, dosai or rice.
