Rava Idli Product Review

Rava Idlis are my favourite breakfast/tiffin. Guess what these are from its GITS instant mix.




The idlis came out perfect and tastes good....since I like Asafotida/Hing flavour a lot, added a pinch of it. This pack needs just water to mix to make idlis.

My suggestion is if you have sour curd/plain yogurt at home you can also try it with that too.





I served it with coconut chutney. My family liked a lot.

Eggless Pumpkin Raisins Muffin

After long time thought of baking, came across this recipe from here but I have made few changes. Hope you enjoy the recipe.

Wet Ingredients
Sweet Pumpkin - 2 cups (grated)
Raisins - 1 cup
Sugar - 1 cup
Vinegar - 1 tspn
Vanilla essence - 1 tspn
Beaten curds/yogurt - 3tspns
Milk - 1/4 cup
Vegetable oil - 1/4 cup
Few cashews

Dry Ingredients
Maida/All Purpose Flour - 1 cup
Wheat flour - 1/2 cup
Baking soda - 1/2 tspn

Preparation Method
Mix all the wet ingredients in a bowl.
Then sift all the dry ingredients and mix slowly with the wet ingredients. Beat well and let it sit for half n hour.
Preheat the oven to 180 C for 15 mins.
Pour batter into greased muffin tray to 3/4th.

Bake for 20 mins at 175 C. Check with a fork or tooth pick whether fully baked or you can bake for another 10 mins.

Allow it to cool. Serve for Breakfast or snack time.


Variations - You can also replace pumpkin with carrots or reduce the quantity and put more dry fruits.

Masala Idlis

Idli is one of the famous n popular breakfast in South India. I love hot idlis with sambar or molagai podi.


I have a different version of Idlis called Masala Idlis. My Father-in-law taught me this recipe.

This recipe is going off to Cooking For Kids Creative Healthy Breakfast n Dinner here at Sara's Corner event started by Sharmi and Wholesome Breakfast by Srivalli. I guess kids will love these.



Ingredients
Steamed Mini Idli - 12 nos
Onion - 1 no (chopped)
Tomato - 1no (Chopped)
Dhaniya Powder - 1/2 tspn
Red chilli powder - 1/4 tspn
Coriander leaves(Cilantro chopped) - 1 tspn for garnishing
Spices Mix - 1 piece each
Curry leaves - 1/2 tspn(chopped)
Turmeric - a pinch
Any cooking Oil - 2 tspns
Salt

Preparation Method
Grind onion in mixie to fine paste. Keep 1 tspn of chopped onions.
Grind tomato in mixie to fine paste. (you can remove skin and grind if you have time)
Heat a kadai, add oil and spices wait till it splutters.
Add chopped onions and saute till light brown.
Now add ground mixture of onion and saute. Add curry leaves.
Then add ground mixture of tomato and cook well till its soft.
Add the masalas and mix well. Add Salt.
Finally add Mini Idlis and mix well. If required sprinkle till water to it. Cook for 5mins and Serve.

Garnish with chopped coriander leaves.

CFK- Creative Food for Picky/Fussy Eaters Healthy Breakfast and Dinner Event Announcement!!!

Cooking for Kids is monthly event started by Sharmi of Neivedyam. I would like to thank Sharmi for giving me an opportunity for hosting her CFK event this month.

I have chosen Creative Food for Picky/Fussy Eaters Healthy Breakfast and Dinner. Most of them complain their children don't like this breakfast or don't like to eat dinner. Each child has their own taste like watching tv and some are playful. Some know by looking at the food itself what dish it will be whether they like or not. Most of them leave the plate without completing the food which is full of nutrients required for the growth. Picky eaters have poor appetites. They need proper attention and to make them eat healthy food.

So, you might also be having a story on this.

Pineapple Kesari (Kesari Bath)

Kesari Bath is a famous sweet in South India. In Bangalore its one of fast moving breakfast with a combination of Upma or Karabath. I have had this in most of marraiges for breakfast in India.

Its a sweet dish cooked with semolina(suji) and sugar. This recipe is in combination with pineapple. The taste is yummy.


Ingredients

Rava(Semolina/Suji) - 2 cups
Sugar - 2 1/2 cups (As per your taste you can reduce or add)
Water - 5 cups
Pineapple - 2 cups(Chopped finely)
Ghee(Nai) - 1 cup(you can add or reduce)
Pineapple essence - 1 tspn(Optional) I have not used
Cashews/Raisins - 2 tspns fried in ghee.
Saffron colour - a pinch

Preparation Method

Roast the rava with 1/2 tspn ghee till its little brown.
In a thick bottom kadai/pan/wok keep hot water little less than that of making upma. Add pineapple, colour and 1 tspn ghee. Wait till pineapple is half cook.
Once its done reduce flame, slowly add rava and mix well without allowing to form lumps.
Once this is cooked add sugar and mix well.
Add leftover ghee and mix well. Wait till no water is left.
Garnish with cashews and raisins.

This can be served as it is or with Upma.

Tip - When water is boiling add 1 tspn ghee so kesari won't stick on the bottom of the kadai.

Life - The leftover can be had within 2 days even without storing in refridgerator.

Vegetable Upma!

Upma is a very tasty breakfast/tiffen in South India. Its my all time favourite... I know many don't like this but actually its very yummy. We can do many variations in upma I am giving recipe for Vegetable Upma. Upma is a frequent dish in my house which is quick and easy to prepare.


This recipe is a long time pending in my drafts. Rava and Vegetables are good for health for growing kids.
Ingredients
Rava(Semolina/Sooji) - 2 cups
Water - 5 to 6 cups
Carrot - 1 no(Chopped into fine pieces)
Beans - few (Chopped into fine pieces)
Green peas - 1 cup
Potato - 2 nos(chopped into fine pieces)
Oil - 4 tspns
Ghee - 1 tspn
Green chilli - 2 nos(As per taste)
Mustard - 1/2 tspn
Urad/Channa dal mixed - 1 tspn
Asafotida(hing) - 2 pinches
Curry leaves - few
Turmeric - 1/2 tspn
Salt to taste
Preparation Method
Heat a kadai, roast the rava slightly till it becomes brown and gets nice aroma. Transfer it to a plate.
In a vessel boil water and keep aside.
In a same kadai, add 3 tspns oil and mustard wait till it splutters. Now add dal and asafotida. Saute till its brown.
Add all vegetables, salt, turmeric and cook well with little water.
Add boiled water, 1 tspn oil allow it to boil. Once its boiled reduce the heat. Add salt and curry leaves.
Slowly add the rava and mix well immediately without allowing it to form lumps. Add water if required. Close with a lid till rava cooks.
Slowly stir until no water is left.
Add ghee on top mix and close the lid. Off the stove.


Upma is ready to serve. Its good to eat as it is or with Sugar or coconut chutney or pickle.

Green Coconut Chutney and an award

Coconut chutney is a very easy and yummy sidedish for most of the breakfast. I am sharing recipe of Green Coconut chutney. This one goes to all chutney lovers.

I use to not eat chutney until now from childhood, but once I tasted in one of the Udupi Hotel now I try sometimes and prepare to.


Ingredients
Fresh Grated coconut - 2 cups
Roasted/fried Bengal Gram - 1/2 cup
Green Chilli - 2 nos(As per your taste)
Fresh coriander(Cilantro/Kothamalli) - 1 cup
Salt

For Seasoning
Oil - 1 tspn
Mustard - 1/4 tspn
Hing - a pinch

Preparation Method

Grind all the above ingredients to a fine paste by adding little water.
Then season with the above ingredients.



Yummy Green Coconut chutney is ready. Enjoy with any of your breakfast.

Ghee Mini Dosa

Dosa is everyone's favourite let it be kids or adults...


I am giving simple and easy recipe for mini dosa which is loved by kids and ofcourse my little son.

Ingredients
Dosa Batter - 4 small cups (makes 4 mini dosas)

For Serving
Sugar - 1 tspn
Ghee - 1 tspn

Method

Heat a tawa(skillet) pour 1 cup dosa batter on the tawa do not spread. Pour ghee on it. Cook both sides till brown.


Mini Dosa is ready to serve. Serve with Sugar and Ghee.

Ven Pongal | Breakfast Recipes!

Ven Pongal is a breakfast/tiffin prepared with rice and paasi paruppu(Moong dal/Split green gram) This is very simple and easy dish to prepare. Its my favourite breakfast. This is famous in Tamilnadu, South India. This is also one of the fast moving breakfast in Tamilnadu because of its Easy to Digest nature.

Its less spicy and very tasty. kids will like it too.....I make this also when I come home late and have less time to cook because its "Fast to cook and good to eat".

Serves - 2 - 3
Ingredients
Rice -  1.5 cups
Paasi Paruppu - 1 cup
Ingi (Ginger/Adrak) - 2" piece chopped
Milagu (Black peppercons) - 1 tspn(As per your taste) slightly crushed or whole
Jeeragam(Cumin seeds) - 2 tspns
Perungayam (Asafotida/ Hing) - a pinch
Karuvepellai (Curry leaves) - few
Pachai milaga (Green chilli) - 1 no (slit)
Oil - 4 tspns
Ghee - 2 tspns
Mundiri paruppu(Cashews) - 10 nos
Salt


Preparation Method
Pressure cook, a little longer than normal, rice and paruppu with green chilli with extra water. So that the mixture is not dry.

In a kadai, add oil and ghee, mundiri paruppu, ingi, milagu, jeeragam, kauvepellai and saute till pepper splitters and mundiri is brown.

Then add this to the cooked rice, add salt. Mix it well and allow it to cook in low flame for couple of mins.

If its thick add little water and mix for 1minute and off the stove.

Ven Pongal is ready to eat. Its good to eat as it is or with Brinjal ghotsu, coconut chutney or sambar.

Notes - If you want it to be more tasty dont hesitate to add more ghee.

Raagi Roti(Indian Flat Bread) with Awards and Tag:-)

Ragi Roti(Kezhvaragu/Finger Millet/Madua/Elusine Indica) - Indian Flat Bread is very healthy breakfast or tiffin. Its a very famous breakfast/tiffin in Karnataka, India. In my village we grow Ragi grains my granny sends grains to us. We clean, dry and make flour.

The whole grain in nutritrional terms is very rich in proteins, providing highest levels of calcium and high levels of dietary fibre. It helps in control of blood glucose levels in diabetics.

In Karnataka its also consumed in many forms like Ragi balls (Ragi Mudde) dipped in sambar, Malt and Koozhu. Ragi Seri can be fed for infants above 6 months since its high in calcium. Whenever we are preparing the flour at home have to be very careful since it contains small muddy particles or stones. When you buy Ragi flour from supermarkets its better to seive 2 to 3 times and then use it.

Here is a simple and easy recipe for Ragi Roti which is high in nutrition and healthy food.

Ingredients
Ragi flour - 4 cups
Onion - 2 nos chopped
Fresh grated coconut - 1 cup
Green chilli - 2nos chopped (As per your taste)
Curry leaves - few chopped
Oil
Hot water
Salt

Preparation Method
In a wide bowl, put all the ingredients and mix it like chapathi dough in hot water.
Take small balls and spread it thinly in round shape on a plastic sheet or directly in the kadai or pan.
Put 1 tspn oil and cook both sides.
Continue same process for left over dough.

Ragi Roti is ready to eat...This is good to eat as it is or with these Pickle/Jaggery/Coconut chutney.

Veg. Sandwich Toast

Veg Sandwich Toast is very easy and simple to prepare. It can be good for kids snack box.

Ingredients
Bread slice - 4nos
Carrot - 1no (Grated)
Potato - 1 no(Grated)
Onion - 1no (chopped length wise)
Cabbage - 1/2 cup (chopped length wise)
Green Chilli - 1 no (chopped)
Curry leaves - few (chopped)
Salt to taste
Oil - 2 tspns
For Patti
Kadala Maav(Besan/Chickpea flour) - 2 tspns
Preparation Method
In a Kadai, heat oil, add onion, green chilli, curry leaves and a pinch of salt. Saute till its transperant.
Add Carrot, cabbage and 2 tspns of grated potatoes. Saute till it cooks.
Stuffing is ready
For Patti
In a bowl add grated potatoes, kadala maav and little salt. Mix well make small balls in hand press and cook both sides on tawa with little oil.
Toast the bread with butter on both sides.
Spread the veggi mix over the toasted bread slice and top it with pattis and cover this with another slice of toasted bread. There you go with the simple yet tasy sandwich.
