Paneer Capsicum Fried Rice | Indochinese Kids Special | Lumch box Recipes

After trying popular Veg. Fried Rice, now I tried Paneer Capsicum Fried Rice for my son. He loves Paneer and Capsicum very much. Usually make once or twice in a week for lunch.
It is also easy and fast to prepare in 15 mins.


Ingredients
Cooked Rice - 1cup Normal or Basmati Rice. BR tastes good.
Onion - 1 no
Paneer - 1 cup(cubes)
Ginger garlic - 1 tspn(Chopped finely)
Green Capsicum/Bell pepper - 1 no( You can also add coloured ones)
Cabbage - 1/2 cup
White or Black Pepper powder - 1 tspn(As per your taste)
Soya Sauce - 1 tspn
Tomato Sauce - 1/2 tspn
Ajinomoto/Chinese salt - a pinch(Optional)
Spring onion - 1 tspn(chopped) for garnishing - Optional
Olive Oil - 2 tspns
Salt

Preparation Method
Wash and shred all veggie into thin pieces.
Heat a wide wok/kadai, add oil, add paneer and slightly toss it. Remove it on a plate. 
Now to the same oil add chopped onion, ginger garlic a pinch of salt and saute. till transparent. Keep the flame high or medium. 
Add capsicum and saute for 1min.
Add cabbage and saute for 1min.
Add all sauces, ajinomoto and saute till its half cooked. Add Paneer and saute.
Sprinkle pepper powder and mix.
Add rice and mix well. Check on salt.
Garnish with chopped spring onion.

Serve with Tomato Ketchup or Gobi Manchurian.

I have served with Smiley Potato and Fryums.

Carrot Paneer Pulao | Lunch Box Kids Recipe| One pot meal!

I prepared this simple pulao for my son and hubby. One likes carrot and one likes paneer, so thought of adding both and preparing. This is easy one pot meal. It was very tasty and both enjoyed the rice.



































Serves - 3 -4 persons

Ingredients
Basmati Rice - 3 cups
Carrot - 2 nos grated
Paneer - 25 cubes
Turmeric - 1/2 tspn
Kitchen king masala - 3 tspns
Garam masala - 1 tspn
Green chilli - 2nos (as per your taste)
Onion - 2 nos (thin slices)
Ginger garlic - 1 tspn
Milk - 1/2 cup
Oil - 2 tblspns
Cardamom and cinamom - 2pieces
Salt as required
Fresh Methi/Fenugreek leaves/Venthaya keerai - handful(Optional)


Preparation Method
Wash and soak basmati rice.
Keep paneer at room temperature. (Thaw the paneer)
Heat a pressure cooker, put oil, add spices, add onions, g chilli and ginger garlic. saute till onions are transparant.
Add grated carrots and saute for 5mins. Add all masala powders and salt.
Mix well and cook for few mins.
Add basmati rice, 5 cups water and milk.
Add salt and allow to boil.
Add paneer cubes and mix.
Add methi leaves and mix
Close the lid and pressure cook for 2 whistles.

Serve hot/warm with Yogurt/Curd/ Onion Raitha.

Rose Sandesh | Bengali Sweet for this Diwali!

I had posted how to make Sandesh previously. I used the same method and prepared Rose Sandesh.

Ingredients

Chena/Fresh Paneer- 2 to 3 cups(It should be definetly homemade and fresh) Click here for recipe
Sugar - 1 cup
Rose Essence  1 tspn
Rose Syrup  1 tspn
Milk - 1/2 tablespoon

Off the stove at this consistency. Allow it to cool.

Add milk, rose essence, rose syrup and knead. Make small balls or desired shapes.

Preparation Method
Powder sugar in mixie. Add the fresh chena to it and grind to smooth paste.
Heat a kadai, add the ground mixture. Keep stirring until its thick and slight colour change. Off the stove.
Allow it to cool.
Once its cool add 1 tblspn milk, rose essence, rose syrup and kneed to smooth dough.
Slowly take small portions and make small balls or into any shape you need. Store in air tight container.
Let it sit for an hour in fridge before your serving.


I could make around 15 nos of medium size.

I also prepared a combo is plain with rose sandesh and it was delicious.

Take small ball of plain sandesh and cover it with rose sandesh.

Shelf life - This will stay for about a week if refrigerated.

Rose Sandesh is ready to serve.

Serve it chilled.

Methi Paneer Rice | Lunch Box Special!

I had prepared Scrambled Methi Paneer here, I prepared the same other day with paneer cubes. So mixed with rice and it was delicious lunch box recipe.





Scrambled Methi Paneer - 2 cups (for recipe click here)
Cooked Rice - as required
Salt

Mix all the above and leave for an hour.

Enjoy at lunch or pack for lunch box.

Notes - Adjust spice levels accordingly while mixing rice. Add can add saute paneer cubes.

Scrambled Methi Paneer!

Me and my son loves Paneer and any dish prepared with it. I wanted to make something different and quick so tried this, as I had fresh methi leaves, Scrambled Methi Paneer is very easy and a good sidedish for chapathi or parantha stuffing. The aroma was very good.

Hope you like it.


Serves - 1 -2 person

Ingredients
Paneer/Cottage Cheese - 20 cubes
Fresh Methi leaves/Venthaya Keerai/Fenugreek leaves - 1/2 cup
Pudina leaves/Mint - 1/4 cup
Onion - 1 no
Garam Masala - 1/2 tspn
Bisibelebath powder- 1 tspn(I used MTR)- Optional but I have used it.
Turmeric powder - 1/4 tspn
Chat masala - a pinch
Green chilli - 2nos(optional)
Oil - 1 tablespoon
Salt


Preparation Method
Scramble paneer and keep it.
Chop onion, g. chilli, methi and pudina finely.
Heat a kadai/wok, add oil onion and saute for few mins.
Now add the leaves and saute till the onions are turning brown.
Add paneer, salt, turmeric, garam masala, bisibelebath powder and mix well.
Let it cook well and combine.
Sprinkle chat masala and off the stove.

Serve hot with phulkas/chapathis.

Notes - If you want to prepare for more persons, increase the ingredients accordingly.

Paneer Butter Masala | Paneer Recipes

Paneer Butter Masala is one of the favourite at my home, which I prepare often.  Do checkout my recipes Tomato PaneerMutter Paneer, Palak Paneer, Pepper Paneer, and many more varieties previously in my Paneer recipes here




Ingredients
Tomato - 1 no(Big and deseeded)
Onion - 2nos
Paneer - 15-20 pieces(for Homemade Paneer click here)
Garlic - 1 clove
Spices - cinamon, cardamom, cloves ; 1 or 2 each
Kasoori Methi - 1/2 tspn
Tomato Ketchup - 1 tablespoon
Red chilli powder - 1/2 tspn
Garam Masala -  1/2 tspn
Full Cream Milk - 1 cup
Ghee or Butter - 2 tblspn
Cream - 2 tspns(Optional)
Sugar - 1/2 tspn
Salt




Preparation Method

Soak paneer cubes in warm water.

Chop onion and tomato to medium size cubes.

In a Kadai, put little oil and spices, half the chopped onion, tomato and garlic. Saute till its soft. Allow it to cool and grind to a fine paste with little milk. I sometimes do a coarse paste.

In the same Kadai, put 1 tblspn ghee/butter, add 2 tblspns of finely chopped onion and tomato(Optional), a pinch of salt saute, add crushed kasoori methi (see notes below)

Add grounded paste with little water. Add salt to taste. Keep it in low flame. Keep Stirring.
Once its cooked well, tomato puree and allow one boil. Then add milk, mix and boil it. Add all masalas and mix well. Keep it in low flame. Once its boiled, check for salt and add paneer and mix well. It should be not too thick or too runny. Just semi gravy and blend well. Add sugar and stir well. You can also add a pinch of kasoori methi. Allow it to boil once and off the stove. Add 1 tblspn of butter on top and off the stove. 

Top it up with cream if you like or serve just like that.



I have served with Phulkas.
Paneer Butter Masala is ready to serve. This can be a side dish for Chapathi, Naan, Kulcha and Rotis (Indian Breads) or Pulao.

Paneer Curry | Kids Delight!

After preparing  Tawa Barbeque Paneer last week, again this week my son was asking for paneer dish.

This was the quick curry I prepared for my son who loves paneer in any form. I didnot know what to prepare was thinking something different and prepared this. He enjoyed.

I had it with  Paratha for lunch yesterday.




































Serves - 1 to 2

Ingredients
Paneer cubes/Cottage Cheese - 1 cup (click here for homemade Paneer recipe)
Onion - 1no
Tomato - 1no(small)
Kasoori methi - a pinch
Turmeric powder - a pinch
Red chilli powder - 1/2 tspn
Oil - 1 tblspn
Jeera -  a pinch
Salt - 2 pinches


Preparation Method
Chop onions and tomatoes.
Heat a kadai, add oil, jeera and saute for 1min
Add onions and saute till transparant. Add chopped tomatoes and saute till soft and both blends well.
Add salt, turmeric, red chilli powder and kasoori methi and mix well.
Add paneer cubes and mix well. Let it cook for 5mins.

Off the stove.

Serve with hot chapathis or parathas.

Tawa BBQ Paneer | Kids Delight| Party Starter!

Tawa Barbeque Paneer is a starter and easy dish. My son loved it as he is a Paneer lover.


Ingredients
Paneer - Block 4 nos(about 100gms)(I used Nanak, you can use Hatsun if available or homemade paneer)
Oil - 1 tspn
Turmeric powder - a pinch
Red Chilli powder - 2 pinches
Chaat Masala - a pinch
Hing/Asafotida - a pinch
Salt if required


Marinate with all the ingredients for 1/2 hour


Heat a tawa and cook


Turn and cook other side


Slowly turn all the sides and cook till brown.


Preparation Method
Thaw the paneer to room temperature.
Take a bowl mix all ingredients except paneer. Then cut paneer slices to desired shapes and coat and marinate for half n hour.
Heat a tawa/skillet, put all the paneer and cook till its brown on all the sides using tooth pick or chop sticks.
Allow it to cool for 2 minutes and then cut into small pieces if required.(I did into small pieces and served with tooth pick)






Serves - 1 person


Delicious Tawa Barbeque Paneer is ready to serve. It can be an evening snack for kids or starter to party with Tomato Ketchup or Green Chutney.


Notes - Since its kids menu, I have put very less spice, if you need more you can add some more.
You can also grill this.

Sandesh | Bengali Sweet Recipe | Dessert Recipe!

After my previous post on How to make  Fresh Homemade Chena/Paneer  I prepared this sweet. Sandesh is a Bengali sweet. Its very delicious and tasty. My bengali friend here also had told me the method. I use to eat a lot of Bengali sweets when in Bangalore from K C Das and Blue Bell, it will be really delicious. No one can eat just one:-)

Ingredients
Chena/Fresh Paneer- 2 to 3 cups(It should be definetly homemade and fresh) Click here for recipe
Sugar - 1 cup
Cardamom powder - 2 pinches.
Milk - 1 tablespoon

Grind Sugar  to fine powder once and add chena and grind it. Heat a kadai and add this.

Heat a vessel and keep stirring.

Keep Stirring till its little dry and water is absorbed.

Off the stove at this consistency. Allow it to cool.

Add milk and knead. Make small balls or desired shapes.

Preparation Method

Homemade Fresh Chena | Soft Paneer | Step Wise Basic Recipe!

Thank you for the wishes on FB for my Engagement Anniversary. I have done this many times at home, but today was able to click the step wise pictures. Hope you like it.

How to make Fresh Chena/Paneer at home step wise pictures. I have already posted the recipe here but this has a slight change in preparation and just loved this. This recipe is exclusive for sweets.

Ingredients
Amul Gold Extra Cream Milk - 1 ltr
Vinegar - 1 tablespoon
Muslin cloth or any white dhothi cloth.

Preparation Method

Step by Step pictures


I have used Amul but you can also use any Full Cream Milk.

Boil Milk


Add Vinegar to the milk


Get ready to collect chena

Just started to curdle.
curdling.

Fully Curdled
Pour and collect. Check out it will be real hot.

Hang for whey water to drop out.

1. In a vessel add milk and allow to boil. Once it come to boil, add vinegar and after 1 min off the stove. Mix it with a spoon/laddle.
2. Let it sit for few minutes and mix until all the milk is curdled.
3. Take a vessel put cloth on it and pour this slowly.
4. Collect the panner and tight it thoroughly to a tap or anyplace so all water is dropped for about an hour or more.
5. Then squeeze extra water and transfer it to a bowl or air tight container for use of any preparation of Bengali Sweets at home.

You can also keep a heavy vessel or pressure cooker on it and flatten it. Once the water is gone. You can cut into squares for gravies. 


This is unsweetned Chena for the sweets.

Thin Crust Cheese Pan Pizza and Sauce Ver 2 - Beginner's Recipe!

Thin Crust Pan Pizza is what I prepared for my son yesterday for dinner. I have already posted Veggie Paneer Pizza here. This one was quick enough and he thorougly enjoyed, but asked me few questions " Why pizza hut aunty won't put Paneer?" but still its yummy:)


Ingredients for Pizza base
APF/Maida - 1 cup
Dry yeast - 1/2 tspn
Warm water - 1/2 glass
Sugar - 1/2 tspn
Salt - a pinch

Toppings
Paneer - few pieces
Cauliflower florets - 1 cup
Basic Sauce - 1 cup(As required) click here for recipe.
Tomato - 1no few chopped and few rings
Tomato Ketchup/sauce - 2-3 tspns
Mozarella cheese - as required
Parmesan cheese - as required
Olive oil/any oil - 1 tspn
Spinach - 1 tspn chopped

How I made the quick sauce?
In a kadai, add 1 tspn of olive oil. Add garlic saute for few mins, then add chopped tomatoes, salt and cook for few mins.
Then add the basic sauce if you have already prepared. Otherwise add in the tomato sauce or ketchup now mix well. Add in the cauliflower and cook. Add in spinach or basil or oregano at this time.
Finally add paneer pieces and mix well.
Off the stove the quick sauce is ready.Preparation Method
Mix yeast with water, sugar and salt in a glass and allow it to sit for 10mins.
When it forth mix it with APF to a soft dough with oil.
Leave it till it raises for about an hour. Punch out the air.
Then you can make 2 small pizza base with it.
Dust the surface with flour, slowly knead like chapathi by rolling pin to thin and round shape.
Heat a skillet/tawa and put the dough and slow cook both sides till its slightly brown. Reduce flame. Remove from fire.
Spread the prepared sauce.
Top it with Mosarella cheeseand Parmesan Cheese.
Brush the tawa with oil of butter and put the pizza on a skillet/tawa, slow cook covered in low flame till the cheese is melted.

Thin Crust Cheese Pan Pizza is ready to Serve. Enjoy warm.

Paneer Manchurian | Dry Version !

This has been in my drafts since long long time and thought of posting it now. This manchurian is very tasty and I love paneer. The first dish I order when we go to a restuarant is gobi manchurian or paneer machurian always.


Ingredients
Fried Paneer - Click here for recipe

For Manchurian
Onion - 1 no chopped
Capsicum - 1/2 no chopped
Green chilli - 1 no chopped

Ginger - 1/2 inch chopped
Garlic - 1 no chopped
Fresh coriander leaves (Cilantro) - Chopped 1 tspn
Spring onion - 1 no chopped

Dark Soya Sauce - 2 tspns
Tomato Sauce - 2 tspns
Chilli sauce - 1 tspn

Salt to taste
(Adjust all the sauces according to your taste)

Preparation Method
For Manchurian
In a pan/wok, add oil, add onion, ginger, garlic, green chilli, capsicum and fry till its transperant.
Then add chopped capsicum and saute.
Add all the sauces and mix.
Add fried paneer and mix. Cook for 2 mins.

Garnish with chopped coriander leaves or spring onions.



Paneer Manchurian is ready to serve.You can serve dry manchurian as starter.

Serve hot with tomato sauce or fried rice.

Notes - I didnot know about light and dark soya sauce, came to know when I reached Singapore. So check before buying.

Crispy Paneer | Women's Day Event Announcement and a Giveaway!

This has been in my drafts since long long time and thought of posting it now. I prepared this to my MIL who eats non spicy food and for my son.

Happy Holi to all my celebrating the colourful festival!


Ingredients
Paneer cubes - 1 pkt
Kadalai Maav (Besan/Chickpea Flour) - 1 tspn
Chola Maav (Corn Flour) - 2 tspns
Arasi Maav (Rice Flour) - 4 tspns
Chilli powder - 1/2 tspn
Kesari/orange colour a pinch - Optional I have not used.

Oil for deep frying

Salt to taste

Preparation Method

Thaw the paneer and put in hot water for few mins. Remove water and keep paneer.
In a bowl make watery batter with Arasi, Chola and Kadalai maav and whisk well without forming a lumps. Add chilli powder and salt.
Add the paneer, coat it drop in oil and deep fry till brown.

Serve Crispy Paneer with Tomato Sauce.

Notes - You can deep fry directly also.
You can add ginger garlic paste to the batter.

Tomato Mutter Paneer!

Its been long time I posted Paneer recipe. Tomato Mutter Paneer is simple and delicious gravy. I have already posted Mutter Paneer previously and my Paneer recipes here. I always pickup the fresh red tomatoes from Little India market.


Ingredients
Tomato - 5nos(Big and deseeded)
Onion - 1no
Frozen Peas - 1 cup
Paneer - 10 pieces(for Homemade Paneer click here)
Ginger Garlic - 2 tspns
Spices - cinamon, cardamom, cloves ; 1 or 2 each
Kasoori Methi - 1/2 tspn
Tomato Ketchup - 1 tablespoon
Red chilli powder - 1/2 tspn
Channa Masala - 1/2 tspn
Milk - 1 cup
Olive Oil - 1 tablespoon
Ghee or Butter - 1 tspn
Cream - 2 tspns(Optional)
Sugar - 1/2 tspn






Preparation Method


  • Chop onion and tomato to medium size cubes.















  • In a Kadai, put little oil and spices, half the chopped onion, ginger, garlic and all the tomato saute till its soft. Allow it to cool and grind to a fine paste.

  • In the same Kadai, put little ghee/butter, oil, spices and fry for a minute. Add onion , saute, kasoori methi for 2 mins.(see notes below)


  •  
    • Add tomato paste with little water. Add salt to taste. Keep it in low flame. Keep Stirring.
    • Once its cooked well, tomato puree and allow one boil. Then add milk, mix and boil it.

  • Add green peas, garam masala and red chilli powder mix well. Keep it in low flame.
  • Once its boiled, check for salt and add paneer and mix well. It should be not too thick or too runny. Just semi gravy and blend well. Add sugar and stir well. You can also add a pinch of kasoori methi. Allow it to boil once and off the stove.
  • Top it up with cream if you like or serve just like that.
  • Tomato Mutter Paneer is ready to serve. This can be a side dish for Chapathi, Naan, Kulcha and Rotis (Indian Breads) or Ghee rice.



    Notes - You can also use Garam Masala instead of Channa Masala.
    If you want tomato bites, you can add 1/2 cup finely chopped tomatoes.
    When it cools, the gravy will become slight thick.
    If you feel you dont want more tomatoes you can reduce 1 no and add more ketchup.
