Eggless Chocolate Walnut Brownie Cake !

When my younger one was asking for a cake, I baked this chocolate cake. It was polished off on the same day. My cake looks like brownie too. So I have named it as Eggless Chocolate Walnut Brownie Cake !



Ingredients

APF/Plain flour/Maida - 2 cups
Sugar - 1 cup
Unsweetened cocoa powder - 2 tblspns
Oil - 2 tblspns
Baking powder - 1/3 tspoon
Baking soda - 1/2 tspoon
Vinegar - 1/2 tblspn
Warm milk - about 1/2 cup or more just to get right consistency
salt - a pinch
Choco chips - 1 tblspn for garnish
Walnut - 2 tblspn
Banana - 1 no

Preparation Method

Preheat oven to 180 C.

Seive flour, soda, baking powder, cocoa powder.
Take the banana and make it to a paste in mixie.
In another bowl add banana paste, sugar, vinegar, oil and mix well. you can use hand mixer or whisk. 
Slowly add the flour mix and mix slowly in one direction. You will get a dough form, now add milk to get consistency as idli batter not very runny. Add chopped walnuts.
Taste the batter😋😋
If you feel sugar is less then add chocochips, if not can bake just like that.

Take a baking tin grease it or can put parchment paper.
Pour in the batter tap it twice.
Garnish with little walnut and chocochip.

Bake it for 40mins. Check with a fork/toothpick when it comes clean or bake it for 5 to 10 mins more. Cool it and slice. 

You can also do icing if you wish.


It is good for school snack or coffee time.

Notes -
You can just do with banana and walnut.
You can also skip banana do with chocolate and walnut.
My cake was just right in sugar as I don't like cake to be too sweet.😊

Homemade Chocolate biscuits| Kids Snack box!

This Chocolate cookies I prepared for my sons snack box. Its really easy and quick. My kids liked it a lot.




Ingredients
All purpose flour (Maida) - 2 cups
Sugar (Powdered/Bura) - 1 cup (As per your taste)

Cocoa powder - 3/4 cup
Baking soda - 2 pinches 
Baking powder - 1 pinch
Oil for binding.

Method

Preheat the oven at 160 C for 10 mins.

Seive all purpose flour, cocoa powder, baking soda, baking powder twice in a wide bowl.
Take oil as required little by little and mix to a smooth dough to get soft dough consistency. around 1/2 -1 cup oil
Take little dough and make small balls by hand and slowly press to get a shape. 
Arrange them in a baking tray(with baking sheet).

Bake for 12mins. You can keep an eye on it. You will get a good aroma and flavour of chocolate. Do a prick test and remove from oven.

Allow it to cool fully and then store in air tight container for storing.






































Enjoy these chocolate cookies!

notes - 
- Do not add more oil just add only required

Variations:
- You can add chocochips .
- You can add nuts also.

Eggless Milo Cake Loaf | Eggless Baking| Easy Kids Recipe!

I am into baking after very long time. Since its summer holidays for the elder one, he has been asking me to bake muffins, but then when I saw this Eggless cake in Sangee's blog, just changed a few things and tried. It was delicious. Still I am amateur baker, this was a good one. 


Ingredients
All Purpose Flour/Maida - 1.5 cups
Milk powder - 1/2 cup
Sugar - 1/2 cup
Baking Soda - 1 tspn
Baking powder - 1/2 tspn
Curds - 3/4 cup
Vanila essence - 1/2 tspn
Milo - 2 tblspns
Olive Oil - 1/2 cup
Salt - generous pinch
Hot water - 1/2 cup(if required)

Preparation Method

Preheat the oven to 350 F, grease the baking tray I used bread tin.
Seive/sift APF, milk powder, baking soda, baking powder, salt, milo and sugar. Mix all well in a bowl.
Now beat the yogurt/curds to smooth, add vanilla essence, mix well.
Add the dry ingredients and mix slowly in one direction.
Finally add olive oil give a quick stir.
Pour in the tray, if you wish you can add chocochips or nuts.
If the batter is too thick add little milk or hot water.

Bake for 30 mins or till the tooth pick comes out clean. I just added gems since my son wanted it.

Eggless Milo Cake Loaf is ready to eat. Serve it for Breakfast with Coffee/Tea.

Notes - Milk powder and Milo are sweet. You can reduce a bit of sugar if you want.

Eggless Banana Walnut Cake! - Repost

Its been long time since I baked and I love Banana and Walnut combination. I have posted few baking recipes here checkout. I had few ripened bananas and walnuts left, so tried this recipe on Saturday.





































Ingredients
Self Raising Flour - 1 cup + 1 tablespoon
Butter - 1/2 cup
Brown Sugar - 1 cup
Ripened Bananas - 2 nos
Walnuts - 1/2 cup + little for topping
Salt a pinch
Baking powder - 1 tspn(optional)
Milk - 1/2 cup

Preparation Method
Preheat oven to 175/350 C.
Melt butter in microwave.
Seive self raising flour.
In a bowl, add butter, sugar and beat till fluffy.
Then add ripe bananas, chopped or puree. Mix well. Add warm milk.
Add the flour and salt and mix in the spatulla.
Add walnuts and mix.

Grease the baking tray with butter and flour. Pour the batter and garnish with more walnuts.

Bake for 40 to 45 mins, until the fork or toothpick comes out clean. Cool on the wire rack and Serve.





































Eggless Banana Walnut Cake is ready, Serve with Coffee/Tea.

Eggless Walnut Muffins!!! - Repost

I started to prepare cake, but ended up in muffins. This was for my brother in law's family at India. All the way from SG to MAD.


Ingredients
APF - 2 cups(200gms)
Melted Butter - 3/4cup(150 gms)
Low Fat Condensed Milk - 1/2 tin
Sugar - 2 tspns
Baking soda - 1/2 tspn
Baking powder - 1 tspn
Vanilla essence - few drops
Warm Milk - 1/2 cup
Walnuts - 1/2 cup
Warm water - 1/2 cup
Salt - 1/4 tspn


For Garnishing choco chips/walnuts.


Preparation Method
Preheat oven at 180 C for 10mins.
In a wide bowl, add butter and condensed milk mix slowly by whisk. Add vanilla essence, sugar, milk and mix slowly to get combined.
Seive APF, Sat, Baking Soda and Baking powder. Add these to the mixture and mix slowy.
Add warm water if required. The batter should not be too thick or too thin.
Add chopped walnuts.
Pour the batter into muffin moulds to 1/2 or 3/4th.
Garnish with choco chips or walnuts.

Bake for 30mins . Insert a tooth pick to check if it comes out clean. Remove and cool or bake for few more mins.
You can also do icing on the top.



Notes - You can also add oil and lessen butter.
You can also transfer to cake tin and bake as cake.
Can also add tutty frutty.

Eggless Vanilla Chocochip Cake!!!

I prepared this for my son and Father in law birthday. Both of them like cakes a lot and it falls on the same date.

Vanilla Chocochip Cake was soft and yummy.


Recipe
Wet Ingredients
Condensed milk -1/2 tin(Can use low fat too)
Butter - 3/4 cup
Vanilla Essence - 1 tspns
Milk - 1/2 cup
Warm Water -  as required.

Dry Ingredients
APF/Maida - 2 cups
Baking Soda - 1/2 tspn

Baking Powder - 1tspn

Preparation Method
Preheat oven to 200 C.
Melt butter in microwave for 10sec. In a wide bowl, add butter and mix all the wet ingredients by using a whisk or hand mixer slowly.

Seive all dry ingredients and mix it slowly to get a batter.
Add 1 to 2 tspns of choco chips
Grease or spread butter paper to 7 or 8 inch round baking dish. Pour the batter. Bake it for 45mins. Check with a fork or skewer when it comes out clean or bake it for 5 to 10 mins more.
Can also brush warm milk and allow it to cool.

You can do icing with Nutella spread. I did later for my son with Nutella.
Enjoy the Eggless Vanilla Chocochip Cake with coffee/Tea.

Eggless Pineapple Cake

Another baking this week, it was my Dad's Birthday ydy and I really wanted to bake a perfect cake for him. My dad and uncle used to tell me to go to Baking Class, but I didnt go, now I really feel for it. If I had gone it would have been so useful for me now:-( But now since he is here in SG, I baked and they liked it a lot and was very happy to eat eggless cake after so many years as he dont eat cakes until eggless.

I would also like to thank my friend Rekha for her help, encouragement and support:-)

So was browsing couple of recipes and found this one. I had pineapple juice and fruit at home and here is my recipe for Eggless Pineapple Cake.

Ingredients

All Purpose Flour/Maida - 2 cups(200gms)
Sweetned Condensed Milk - 1/2 tin

Butter - 2-3 tablespoons or less than 100gms(Melted)
Baking Soda - 1/2 tspn
Baking powder - 1 tspn
Salt - 1/4 tspn
Fresh Pineapple -  1/2 cup(chopped)
Pineapple Juice - 1/2 cup

Preparation Method
Preheat the oven at 180 C.
Melt butter in Microwave for 30 secs.
In a bowl, add melted butter,condensed milk. slowly mix it up in a spatulla.
Add 2 tspns of pineapple pieces and little pineapple juice.
Save little to brush on top later.
Seive APF, baking soda, salt and baking powder.
Add slowly in parts APF, baking soda and baking powder. Fold it or mix with spatulla.
Grease the baking tray or pan.Bake it for 20mins or check with a fork or toothpick until it comes out clean or bake it for 5 mins more.
Brush leftover pineapple juice on top when its slightly warm.
When its cooled cut into desired shapes.
Garnish with whip cream, few fresh pineapple pieces and cherry.

Enjoy this soft Eggless Pineapple Cake.

Notes - You can also use tinned Pineapple and use the same juice.
You can also use Pineapple essence.
Keep leftover pieces in fridge and use later.

Eggless Banana Muffin for a Cause!!!

I am baking often since my parents are here and for my son. Eggless Banana Muffins were perfect and enjoyed it. You can also serve for the Tea Party as some like sweets at tea time.

Ingredients
All Purpose Flour/Maida - 1.5 cups
Sugar - 1/2 cup
Butter - 1 tspn(at room temperature)
Ripe Banana -1 no
Baking powder - 1/2 tspn
Baking Soda - 1/2 tspn
Warm Milk - 1/2 cup
Preparation Method
Preheat the oven at 180 C.
In a bowl, add butter and sugar mix well.
Mash banana and mix it.
Now slowly milk and mix well.
Add slowly in parts APF, baking soda and baking powder. Mix it with a hand mixer or beater.
Grease the muffin trays, pour to the half of the cup or 3/4th cups. I poured for 1/2 cups since my son wanted small muffins. Mine came upto 10muffins.

Bake it for 30mins or check with a fork or toothpick until it comes out clean or bake it for 5 mins more.


Cool it. Garnish with cherry.

Enjoy Eggless Banana Muffins at Tea/Coffee time or for parties.

Notes - You can also add nuts or walnuts.

Eggless Chocolate Cake has won Best Cake Recipe!!!

Eggless Chocolate Cake is one more cake in my baking section. I would like to thank my hubby's cousin Pushpa Akka for helping me with this recipe. After baking this cake I am more confident in baking.




Wet Ingredients
Condensed milk -1 tin(Can use low fat too)
Butter - 100gms
Plain Soda - 150ml

Dry Ingredients
APF - 1 cup
Cocoa Powder - 1/2 cup
Baking Soda - 1/2 tspn
Baking Powder - 1/2 tspn


Preparation Method
In a wide bowl, mix all the wet ingredients in a beater or hand mixer.
Seive all dry ingredients and mix it slowly to get a batter.

Preheat oven to 180 C.

Grease it or spread butter paper in 7 or 8 inch round baking dish. Pour the batter. Bake it for 30mins. Check with a fork when it comes clean or bake it for 5 to 10 mins more. Cool it and slice. I have just dusted icing sugar on top.

Enjoy the Eggless Chocolate Cake.

Eggless Choco Fruit and Walnut Cake

It been raining since 4days continuously and its very boring.

After long time I am posting baking recipe, my previous one was Cruncy Pina Cookie. Baking is one of my new focus, I love baking if its success and this recipe is one of it.

Ingredients
APF/Maida - 1.5 cups
Condensed Milk(Lowfat) - 1/2 tin
Choco powder -  1 tspn(unsweetned, I added for colour optional)
Mixed fruits and walnut - 1/2 cup
Baking Soda - 1 tspn
Baking Powder - 1 tspn
Vanilla essence - few drops(optional)
Warm Milk and Warm water - 1/2 cup + as required
Sugar if required
Vinegar - 1 tspn


Preparation Method
Seive APF, soda, chocopowder and Baking powder. Add fruits and nuts and mix.
Take a wide bowl, mix condensed milk and milk. slowly add the dry ingredients and mix in one direction slowly.
If the batter is too thick, add little warm water, vinegar and mix without lumps.
Pour in the small rectangle baking dish. Grease the dish, I had greased with olive oil.
Pre heat the oven at 200 C.

Bake for 30- 40 mins. Take a tooth pick or fork and check if it comes out clean or bake for few more minutes.

Choco Fruit and Walnut cake is ready. Enjoy it with Coffee/Tea.

I cut into small squares wrapped it in aluminium foil and rolled it colour paper like chocolates for my son.

Crunchy Pina Cookie!!!

Crunchy Pina Cookie is different one. I am baking after a long time, this biscuits/cookie turned out crispy and crunchy. I added more milk so could not cut in cookie cutter and this was good. My son enjoyed.




Ingredients
Maida/APF - 1 cup
Sugar - 1 cup
Corn Flour - 1/2 cup
Baking Powder - 1/4 tspn
Unsalted Butter - 2 tspns
Pineapple essence - 2 drops(Optional) - Pina is Pineapple in Spanish.
Milk - 2-3 tspns



Preparation Method
In a wide bowl, add butter, sugar and pineapple essence. Mix well.
Sift maida, corn flour and baking powder separately.
Now slowly mix with butter and sugar mixture.
Add milk and make a thick batter.
Pre heat oven to 180 C 
Pour 1-2 spoons on the baking tray. Leave little gap from one cookie to another since it will spread a bit.
Bake for 20mins or till brown.


Crunchy Pina Cookie is ready. Enjoy it with coffee or tea.

Eggless Pumpkin Raisins Muffin

After long time thought of baking, came across this recipe from here but I have made few changes. Hope you enjoy the recipe.

Wet Ingredients
Sweet Pumpkin - 2 cups (grated)
Raisins - 1 cup
Sugar - 1 cup
Vinegar - 1 tspn
Vanilla essence - 1 tspn
Beaten curds/yogurt - 3tspns
Milk - 1/4 cup
Vegetable oil - 1/4 cup
Few cashews

Dry Ingredients
Maida/All Purpose Flour - 1 cup
Wheat flour - 1/2 cup
Baking soda - 1/2 tspn

Preparation Method
Mix all the wet ingredients in a bowl.
Then sift all the dry ingredients and mix slowly with the wet ingredients. Beat well and let it sit for half n hour.
Preheat the oven to 180 C for 15 mins.
Pour batter into greased muffin tray to 3/4th.

Bake for 20 mins at 175 C. Check with a fork or tooth pick whether fully baked or you can bake for another 10 mins.

Allow it to cool. Serve for Breakfast or snack time.


Variations - You can also replace pumpkin with carrots or reduce the quantity and put more dry fruits.

Kueh| Homemade Biscuits

My dream come true, I wanted to buy a oven and try biscuits. For this birthday my sweet hubby bought me a Oven. So I tried this recipe which came out good and thought of sharing.

This recipe was taught by my neighbour and my dear friend who prepared for Ramadan. Here out in Singapore this is very famous and called Kueh(in Malay) which is done for Ramadan. Its Eggless so I requested her to teach me.

Am happy in sharing my first oven recipe since this is prepared with homemade ghee from my village. Thanks Paati and Amma for sending it across the miles:-)

Ingredients

All purpose flour (Maida) - 6 cups
Sugar (Powdered/Bura) - 4 cups (As per your taste)
Ghee for binding.

Method
Seive all purpose flour and powdered sugar in a bowl.
Warm ghee in a kadai.
Then pour to the flour slowly and mix to a smooth dough if required you can add more ghee to get the consistency. Set aside for 1/2 hour to 1 hour.
Then roll thick by rolling pin and cut them to desired shapes by cookie cutter or make small balls by hand and slowly press to get a shape.
Arrange them in a baking tray(with baking sheet).


Preheat the oven at 170 C for 10mins and bake for 15mins till its brown. You can keep an eye on it. You will get a good aroma and flavour of ghee. (Also you keep one biscuit for trial and take a fork and just press. It should be dry out side and nicely baked)

Once done remove when cool and store it.


Yummy biscuits are ready. It can be served with tea/coffee. A great treat for kids too.
