Onion Tomato Gojju Pasta | Indian style!

I had posted here on instagram poll. Many had asked the recipe for the pasta. Here is the simple recipe for the same. I hope you enjoy. My kids and family liked it a lot and I prepared 2 times in a week.

Ingredients
Onion  - 2 onions (chopped)
different version can be referred here
Tomato - 3 nos(chopped)
Garlic - 4 nos(big ones finely chopped)
Sambar powder - 1 tblspn(adjust as per spice level)
Turmeric powder - 1/4 tspn
Pepper powder - 1/4 tspn
Parsley and oregano.
Coriander finely chopped(optional)
You can use anyone of the above for garnish
Salt to taste
Water if required
any shape pasta - 2 big bowls or 4-6 handfull.
Oil - 4 tblspns
mustard - 1/2 tspn
fenugreek seeds - a pinch

Preparation method
First, in a heavy bottom kadai, add oil, mustard seeds and fenugreek seeds. once it splutters add onion, garlic and saute till pink.
Now add chopped tomatoes.
Add salt, masala powders and cook till it becomes soft and mushy. Add little water and cook to saucy stage. Now the gojju is ready.
Add cooked pasta and mix well.
Adjust salt.
Garnish and serve.

I have not used cheese for this pasta. You can top it with cheese.

Macaroni Payasam | Pasta Kheer!


Macaroni Payasam | Pasta Kheer is an easy dessert and loved by kids. After all the festivals I have started to post recipe, planning to blog regularly from now on. I prepared this for navaratri. It was different and tasted delicious.


Ingredients
Macaroni - 1 cup(can use baby pasta or any pasta of your choice)
Full cream Milk - 1 ltr
Vanilla Custard powder - 2 tblspn
Sugar - 3/4cup

Method
~In a vessel/bowl boil water, add a pinch a salt and 1 tspn ghee enough to cook pasta. 
~Once pasta is cooked wash in cold water.
~Boil milk in heavy bottom vessel/pan. Keep in low flame to thicken.
~Mix custard powder in a bowl make a paste with milk and add to the milk. 
~Add sugar n keep stirring.
~Add cooked macaroni to the milk. 
~Mix well. 
~Let it boil for 10 mins in low flame.
~Off the stove. Allow to cool.

Serve chilled.

Macaroni Payasam/Kheer ready to serve.

Notes:

- Condensed milk can also be added.
- It can be done without custard powder.
- Can add cardamom/elaichi powder too.

Pasta in White sauce | Easy Kids recipe!


Dear Friends,

I am blogging after long time, yes I am back of my 2 yr old who is very active:-)
Hope to be back soon with recipes.

I prepared this simple and easy pasta dish for my kids. This can be prepared for after school also.



Ingredients
Pasta / Fusilli(Tricolour) - 2 cups(You can use as per your choice)
Butter - 1 tblspn
Maida/APF - 1 tblspn
Milk - 1 cup
Water - 1/4 cup
Pepper powder - a pinch
Garlic- 1/2 tspn chopped(optional)
Mixed herbs - 1 tspn or oregano or basil
Cheddar cheese - optional
Water to boil pasta, salt and 1 tspn olive oil.

Optional - vegetables and olives.

Preparation method
Boil enough water, add salt and olive oil.
Add the pasta and cook.
Heat a kadai, add butter let it melt a bit.Add garlic and saute.
Add flour and saute for few minutes.
Add water and milk and stir without forming lumps.
Add salt, pepper powder, herbs. and let it cook and be creamy. Pasta sauce is ready.

Now add the boiled pasta, check on salt
once its cooked well and thick.

Off the stove and serve hot with cheese.

Pasta in white sauce is ready.

Notes - To make it more creamy can add cheese slice to the sauce.

Veggie Pomodoro | Whole Wheat Italian Pasta Recipe!

Veggie Pomodoro is one pasta dish, we order at Pastamania and Pizzahut. Today my son wanted to eat pasta, so prepared for his lunch at home. These are my son's favourite restuarants. I have used whole wheat organic pasta.


Serves - 1 person

Ingredients
Wheat Fusilli - 2 cups (you can use any of your choice pasta)
Red chilli flakes - a pinch(As per your taste)
Parmesan cheese - 2 tablespoons
Pasta Sauce - as required
Olive Oil - 1 tablespoon
Black olives - 2 nos chopped

Preparation Method
In a vessel boil water, add 1 tspn oil and a pinch of salt. Once its boiling add pasta and allow it to cook for 3 to 5 mins. Keep checking it should not be over cooked. Cook al dente.
In a sauce pan/kadai, add olive oil, garlic, pasta sauce and let it cook for few minutes.
Add cooked pasta and mix.
Add chilli flakes, salt and mix well. Cook till all blends well for few mins.

Garnish with Parmesan cheese and chopped parsley.


You can also add mushrooms and green peas to it. Since I don't eat didnot add. Add in the sauce itself and cook.


Veggie Pomodoro is ready to serve. Enjoy hot.

Notes - Some like more sauce but like less sauce and more pasta. Adjust according to your like.
Another way of serving pasta, put boiled pasta on serving plate and pour the sauce over it. Garnish with cheese. Mix and eat.

Homemade Italian Basic Sauce!

I have been wanting to post this recipe from long time,  thought of posting this today as I prepared. I love Italian dishes.

I used to use store bought sauce and this is the first time I tried at home. It was perfect and yummy. This sauce can be used for Pizzas /Pastas /as a dip.



Ingredients
Tomatoes - 2 nos
Garlic - crushed /chopped 2 to 3 nos
Basil leaves - few
Tomato sauce - 1/2 tspn
Olive oil - 1 tspn

Preparation Method
Blanch the tomatoes(see notes below)
Heat wok/pan, add olive oil, add garlic just toss for few mins(it should not be brown)
Add the tomato puree, tomato sauce, chopped basil leaves and cook the gravy till raw smell goes. You will get a thick sauce.

Italian Basic Sauce is ready for use in your dishes.

Allow it to cool and store in air tight container.
Notes - Blanch - Boil enough water in a vessel, put the tomotoes and cover it for few mins. Then put in cold water, remove skin slowly. Cut into four pieces and deseed it. Put in a blender/mixie and grind to fine paste.

Pasta in Tomato Sauce /Tomato Pasta

I just love Italian Veg food, posting my first Italian Pasta recipe in my blog. Pastas are very tasty, rich and so filling. Last time I tried in Fettuchini, but this time my son liked the smaller one.



Ingredients
Any desired Pasta - 2 cups(I have used Conchiglie Rigate)
Prego Italian Pasta Sauce - 1-2 cups(According to your taste)
Green peas - 2 tspns
Red chilli flakes - 1 tspn
Parmesan Cheese and Mozeralla cheese - 1-2 tablespoon(As per your taste)
Oregano (Optional)
Parsley or chopped coriander - 1 tspn
Olive oil - 1 tspn

Preparation Method
In a vessel boil water, add 1 tspn oil and a pinch of salt. Once its boiling add pasta and allow it to cook for 3 to 5 mins. Keep checking it should not be over cooked.
In a sauce pan/kadai, add olive oil, pasta sauce and let it cook for few minutes.
Add green peas and mix well.
Add cooked pasta and mix.
Add chilli flakes, salt and mix well. Cook till all blends well.

Garnish with Parmesan or Mozzarella cheese and chopped parsley or coriander.

Pasta in Tomato Sauce is ready to serve. Enjoy hot.
