Ambakalya is a Parsi sweet dish that is prepared mostly during Navroze, the Parsi new year.

Ingredients:

1 kg mangoes
1/2 kg jaggery
Cinnamon stick

Method:

Peel the mangoes and cut into pieces. Cut the jaggery into small pieces. Cook mango slices till they turn soft. Mix jaggery and water. Boil it till jaggery melts. Add mango slices and cinnamon stick. Cook it when covered on a medium flame for ten minutes. Now cook it uncovered till it turns to a thick syrup. Keep it for cooling. Ambakalya is ready.

Ghee Mini Dosa

Dosa is everyone's favourite let it be kids or adults...


I am giving simple and easy recipe for mini dosa which is loved by kids and ofcourse my little son.

Ingredients
Dosa Batter - 4 small cups (makes 4 mini dosas)

For Serving
Sugar - 1 tspn
Ghee - 1 tspn

Method

Heat a tawa(skillet) pour 1 cup dosa batter on the tawa do not spread. Pour ghee on it. Cook both sides till brown.


Mini Dosa is ready to serve. Serve with Sugar and Ghee.

Thenga Burfi (Coconut Sweet Bars) my 150th post with Awards Shower!!!

Thenga Burfi is very famous sweet in India which is easy to prepare. This is prepared with grated coconut and sugar. Navarathri has begun starting this day and Wishing Ramadan Kareem and Selamat Hari Raya Puasa.

Ingredients
Fresh Grated coconut - 4 cups
Sugar(Fine) - 3 cups(if you like more sweet you can put 1:1)
Cardamom powder(Elachi) - 1/2 tspn
Orange colour - a pinch(Optional)
Ghee - 1/2 cup
Cashews - (Optional)

Method
Mix grated coconut and sugar in a thick bottom kadai. Heat it and keep stirring. when sugar is dissolved, Add ghee, colour and cardamom powder
When its boiling and bubbles are up and doesnt stick to kadaipour it on a greased plate or tray. (If it becomes dry and thick burfis will be hard)
Allow it to cool a bit and cut into desired shapes. When fully cooled remove and serve or store

Thenga Burfi is ready.
